Job Title: Assistant Kitchen Manager

At LOW COUNTRY QUISINE BY JOLIE RAMIZE, we are seeking a highly skilled and experienced Assistant Kitchen Manager to join our team.

Job Summary:

The Assistant Kitchen Manager will assist the Kitchen Manager in overseeing the daily operations of the kitchen, ensuring that all food is prepared and presented to the highest standards. This role will also be responsible for training and developing kitchen staff, controlling food costs, and maintaining a clean and organized kitchen environment.

Key Responsibilities:
  • Assist the Kitchen Manager in inventory management, ordering, and receiving ingredients and culinary supplies.
  • Train and develop kitchen staff, including disciplinary actions when necessary.
  • Control food costs and ensure that all food is prepared and presented to the highest standards.
  • Prepare and store food items for advanced production.
  • Participate in daily food production and ensure that all food is stored at the appropriate temperature for the appropriate length of time.
  • Monitor and maintain proper sanitation procedures for all kitchen facilities and equipment.
  • Keep the kitchen clear and organized for day-to-day operation.
  • Direct proper maintenance of all walk-in coolers, including rotation of food products and cleanliness.
  • Monitor the safety of staff and ensure that all kitchen staff are aware of and follow proper safety procedures.
  • Assist in producing and plating plates.
  • Ability to work outdoors for extended periods of time (at least 8 hours/shift).
  • Ability to work a flexible schedule to include AM/PM, weekends, holidays, and catering events.
  • Ability to stand for extended periods (at least 8 hours/shift).
Requirements:
  • Ability to apply common sense understanding to carry out detailed written and/or oral instructions using logic and problem-solving.
  • Ability to write and perform daily prep lists and par sheets for all shifts.
  • Self-motivated and ability to work with limited supervision.
  • Meet deadlines for projects and new requests.
  • Maintain good working relationships with the management team, sales, and operations.
  • Conduct pre-shift briefings with kitchen staff when directed by the Kitchen Manager.
  • Demonstrated ability to maintain composure and take control during high-demand business circumstances.
