Position Overview:
As a vital member of the culinary team at Hard Rock Hotel and Casino Atlantic City, the Culinary Operations Supervisor plays a key role in managing kitchen activities under the guidance of the Executive Sous Chef. This position is essential in fostering a vibrant and safe culinary environment where excellence in food quality and service is the top priority.

Key Responsibilities:

  • Oversee a designated kitchen section to ensure smooth and efficient operations.
  • Manage food requisitions in alignment with menu requirements.
  • Address and report incidents promptly and accurately.
  • Train and mentor junior kitchen staff, guiding them to meet operational standards.
  • Utilize culinary expertise to prepare dishes that meet flavor, presentation, and quality expectations.
  • Maintain food costs within the parameters set by the organization.
  • Monitor daily food costs and maintain awareness of monthly trends.
  • Uphold high standards of hygiene and cleanliness in the kitchen.
  • Ensure compliance with HACCP standards and maintain all necessary documentation.
  • Deliver fast, friendly, and fresh service to guests.
  • Develop team members through training, coaching, and constructive feedback.
  • Conduct personal behavior and manage the performance of direct reports in line with the company’s values.
  • Ensure optimal staffing levels to manage labor costs while delivering exceptional guest service.
  • Stay informed about current culinary trends and share relevant information with the team.
  • Ensure all activities comply with legal and ethical standards.
  • Adhere to all internal policies and procedures.
  • Perform additional duties as assigned.

Qualifications:

  • Preferred Culinary Arts degree with a minimum of 5 years of experience in a culinary setting.
  • At least 2 years of management experience in a culinary environment is required.
  • Strong commitment to food safety and occupational standards.
  • Proficient in software applications such as Outlook, Excel, and Word.
  • Professional appearance and demeanor are essential.
  • Excellent organizational, communication, and multitasking abilities.
  • Effective communication skills in English, particularly in relation to job responsibilities.
  • Able to coach and guide team members effectively.
