This Sous Chef will oversee our fine dining restaurant, and we are looking for someone with over three years of experience in a fine dining setting who understands the nuances of service flow.
Job Requirements:
- Demonstrated success as a Sous Chef or Kitchen Manager in a high-volume upscale restaurant or luxury resort.
- A strong passion for culinary excellence, knowledge of wines, and commitment to service.
- Proven ability to cultivate and lead a team.
- Familiarity with systems, habits, and processes that ensure exceptional execution.
- A stable employment history reflecting upward career mobility.
Additional Responsibilities:
- Oversee food production for the dining area, including menu development and staff supervision.
- Assist in creating daily specials.
- Support the hiring, training, and ongoing management of all personnel involved in dining room food production.
- Maintain professional standards of conduct and appearance consistently.
- Assist the Assistant Executive Chef as needed.
- Set and uphold food cost objectives for the dining room, taking corrective actions as necessary to meet financial targets.
- Perform additional special tasks as assigned by the Assistant Executive Chef.
- Address all member complaints and assist in their resolution.
- Support food procurement, delivery, storage, and rotation of food items.
- Collaborate with front-of-house staff and management regarding specials and operational concerns.
- Ensure compliance with health department standards for safe food handling.
- Propose ideas for future goals, operational enhancements, and personnel management to the Assistant Executive Chef.
Requirements:
- A minimum of three years of experience in an upscale dining environment.
- Availability and transportation for a flexible schedule, primarily PM shifts, averaging 45 hours per week (overtime paid after 40 hours).
- Strong interpersonal and organizational skills.
- Ability to walk, stand, and/or bend continuously to perform essential job functions.
- Capability to lift over 50 lbs.
- Ability to perform under pressure and manage stressful situations during peak times.
Reports to: Assistant Executive Chef
