Job Summary

The Pastry Department Manager is responsible for the daily operation of the pastry department, including the preparation of baked products and pastries according to established recipes. The ideal candidate will maintain a clean and organized kitchen, ensure the proper usage of pastry kitchen tools and equipment, and work effectively as part of a team.

Key Responsibilities
  • Product Preparation: Combine standard mixes and ingredients for cakes, pies, brownies, breads, and specialty pastries as assigned.
  • Baking and Finishing: Mix, bake, and finish all products as necessary, ensuring high-quality presentation.
  • Inventory Management: Ensure all products are rotating on a first-in, first-out philosophy, and maintain a solid knowledge of all food products.
  • Labeling and Dating: Label and date all products to ensure safekeeping and sanitation.
  • Team Collaboration: Work as a team, assist helpers and/or Pastry Chef's as needed, and provide assistance with special functions and project preparation and presentation.
  • Quality Control: Maintain complete knowledge of and comply with all department policies, service procedures, and standards.
  • Communication: Report all discrepancies, accidents, and hazards to management, and maintain good communication skills.
Requirements
  • Education: High school diploma or general education development (GED) required.
  • Experience: Culinary apprenticeship, AOS degree from culinary institution, or two (2) years experience working in a pastry kitchen or bakery preferred.
  • Skills: Good organizational and communication skills, ability to work well both independently and with others, and ability to maintain clean and proper work attire.
  • Certifications: Must obtain and maintain a Food Handler's Card within 90 days of employment.
