GENERAL OVERVIEW

The Assistant Manager for 1882 Cantina is responsible for overseeing the restaurant's operations in the absence of the Cantina Manager. This role is pivotal in ensuring that guests enjoy a remarkable dining experience by upholding exceptional service standards and adhering to operational protocols.

PRIMARY DUTIES

  • Implement and uphold the policies and procedures of the organization.
  • Ensure service delivery meets the standards outlined in the service manual.
  • Maintain the restaurant's atmosphere as directed by management.
  • Address guest feedback promptly, coordinating with culinary and beverage teams as necessary.
  • Ensure adherence to all operational rules and regulations.
  • Handle administrative responsibilities as assigned by the outlet manager, including employee scheduling and disciplinary actions.
  • Assist in supervising and directing daily operations, including staff assignments and attendance tracking.
  • Manage inventory levels by ordering supplies as needed, ensuring adequate stock of food and beverage items.
  • Possess a thorough understanding of the menu offerings and be knowledgeable about various culinary styles.
  • Be capable of performing all roles within the department, including serving and hosting.
  • Stay informed about contemporary dietary requirements and food safety standards.
  • Be flexible and available to work various shifts as required.
  • Maintain labor costs within the guidelines set by the Food & Beverage Director.
  • Assist in preparing weekly and monthly forecasts for the department.
  • Submit maintenance requests and manage equipment shortages.
  • Provide training on menu and service standards in accordance with company policies.
  • Conduct daily pre-shift meetings to ensure team readiness.
  • Oversee the inventory of china, silverware, and glassware.
  • Perform any other relevant duties as assigned.

ACCOUNTABILITY

The Assistant Manager is accountable for the overall operation of the restaurant in the absence of the Cantina Manager, including responsibilities related to hiring, employee relations, and budget management.

QUALIFICATIONS AND REQUIREMENTS

  • A high school diploma or GED is required; or three to six months of related experience or training; or an equivalent combination of education and experience.
  • Strong communication skills are essential, including the ability to read and interpret documents and write routine reports.
  • Mathematical skills necessary for basic calculations and understanding of ratios and percentages.
  • Ability to apply common sense and deal with various situations effectively.
  • Required certifications include a Gaming Class A License, Food Handlers License, and TIPS Certification.
  • Demonstrated skills in customer service, professionalism, and the ability to work under pressure.
