Executive Pastry Chef for High-Volume Kitchen

We are seeking an experienced Executive Pastry Chef to join our team at SAHARA Las Vegas. The ideal candidate will have a strong background in pastry production, including breads, pastries, confections, cake design, and ice cream making.

About the Role

This is a high-volume kitchen position that requires excellent time management skills, attention to detail, and the ability to work efficiently under pressure. The successful candidate will be responsible for running and assisting the Executive Sous Chef with all pastry and bread production in the building and Banquet hot line.

The ideal candidate will have a proven track record of success in managing a team, maintaining high standards of quality, and controlling food costs. They will also have a strong knowledge of advanced pastry techniques, be organized, move quickly, handle pressure well, and take great pride in their demeanor and work.

Responsibilities
  • Assist Department heads and Team with the planning, preparation, and execution of bread and pastries, including but not limited to proofing, baking, cake decorating, and ice cream making
  • Develop and maintain Standards and Procedures, and attend meetings when designated to do so
  • Maintain and monitor Hotel sanitation programs and provide food safety training to all employees
  • Control food cost by maintaining food standards at reasonable cost through liaison with the Purchasing Department
  • Respect all food products and ensure proper storage and rotation are practiced daily in accordance with SOP's, local Health Department, and HACCP regulations
  • Follow specifications and execute all standard recipes to ensure flavor, quality, size, and presentation of products meet the Hotels standards
  • Maintain a clean and organized work area at all times and be in compliance with the established sanitation standards of superior personal hygiene
  • Maintain clear and effective communication between employees and promote a positive atmosphere in the kitchen
Requirements

To be considered for this role, you will need:

  • At least three (3) years of experience working in a high-volume and detailed-oriented kitchen
  • Knowledgeable and well-rounded in all areas of the pastry kitchen, including breads, pastries, confections, cake design, and ice cream making
  • A valid ServSafe certification
  • A degree in Pastry Arts or a related field
  • Excellent communication and leadership skills
  • Able to work in high-stress conditions, pay close attention to detail, handle multiple tasks, work efficiently, and demonstrate a high level of patience
  • Able to stand, walk, bend, kneel, climb, reach, and perform repetitive motions frequently for 8-12 hours a day
  • Familiar and knowledgeable with operating all kitchen equipment and machinery, including safe operations and maintenance
  • Familiarity with computers and software programs
