We are seeking a highly skilled and experienced Sous Chef to join our team at Rapoport's Restaurant Group Inc. as an Executive Chef Assistant. This is a key leadership position that requires a strong culinary background, excellent management skills, and the ability to work effectively in a fast-paced kitchen environment.
Key Responsibilities- Assist the Executive Chef: Provide support to the Executive Chef in the day-to-day running of the kitchen, including ordering, labor control, and relaying any problems to the Executive Chef regarding equipment, scheduling, etc.
- Food Preparation and Quality Assurance: Prepare and/or direct the preparation of food to be served, complying with all applicable sanitation, health, and personal hygiene standards and following established food production programs and procedures.
- Menu Development and Quality Control: Responsible for menu development and quality assurance, ensuring that all menu items meet the highest standards of quality and presentation.
- Supervision and Coaching: Supervise kitchen staff, coach and develop through continuous training to ensure company values and mission are upheld.
- Inventory Management: Determine the amount and type of food and supplies required, ensuring availability of supplies and food or approved substitutions in adequate time for preparation.
- Sanitation and Safety: Comply with established sanitation standards, personal hygiene, and health standards, observing proper food preparation and handling techniques.
- Equipment Maintenance: Report necessary equipment repair and maintenance.
- Food Safety: Complete food temperature checks before service and maintain daily production records.
- Education and Experience: A high school diploma or equivalent, culinary school or program preferred. Prior experience as a sous chef for 5 years.
- Skills and Abilities: Proficient interpersonal relations and communicative skills; ability to stand, reach, lift, bend, kneel, stoop, climb, push, and pull items weighing up to 50 pounds; knife skills; manual dexterity; auditory and visual skills; ability to follow written and oral instructions and procedures.
- Certifications: Food safety handler card or Manager food-safety handler is a must.
