Position Title: CULINARY OPERATIONS MANAGER

Pay Grade: 14

Reports To: Director of Dining Services

Salary: $80,000-$85,000/yr.

Position Summary:

In the role of Culinary Operations Manager, you will oversee all kitchen activities for a corporate dining account. Your responsibilities will include preparing and guiding the preparation of meals in alignment with corporate standards and guidelines.

This position is ideal for a dynamic and innovative culinary expert.

Key Responsibilities:

  • Designs regular and customized menus in accordance with established standards.
  • Adheres to standardized recipes, portioning, and presentation norms. Completes and utilizes daily production logs and waste tracking sheets. Tastes finished dishes to ensure quality.
  • Educates kitchen personnel in food preparation, safe handling, equipment operation, food safety, and sanitation based on company and regulatory standards.
  • Establishes and maintains cleaning and maintenance schedules for equipment, storage, and work areas. Ensures kitchen staff adheres to and completes assigned schedules.
  • Manages inventory of food and non-food supplies to remain within established guidelines while ensuring necessary products are available.
  • Makes decisions regarding the use of leftover food products in compliance with company guidelines.
  • Ensures compliance with federal, state, and local health and sanitation regulations as evidenced through audits.
  • Follows safety policies and procedures, including occurrence reporting.
  • Participates in departmental meetings, staff development, and professional programs as appropriate.

Preferred Qualifications:

  • A.S. degree or equivalent experience.
  • 5+ years of progressive culinary or kitchen management experience, depending on formal education or training.
  • Extensive catering experience is advantageous.
  • Experience in high-volume, complex foodservice operations is highly desirable.
  • Institutional and batch cooking experience.
  • Hands-on chef experience is essential.
  • Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost control, and presentation.
  • Proficient in computer applications, including Microsoft Office (Word, Excel, PowerPoint), Outlook, and the Internet.
  • Willingness to engage in client satisfaction initiatives.
  • ServSafe certification is highly desirable.
