Key Responsibilities:
- Recruit, select, train, schedule, mentor, and assist team members, ensuring compliance with brand standards and HHM core values.
- Supervise the preparation and production of menus, including recipe development and execution.
- Manage kitchen operations and direct assigned staff effectively.
- Ensure adherence to recipes and yield guides to maintain department standards.
- Innovate new menu items and conduct recipe testing.
- Train and evaluate staff on the proper use of kitchen equipment, techniques, and skills.
- Oversee kitchen personnel to guarantee that cooking methods, garnishes, and portion sizes meet established guidelines.
- Monitor budget, control costs, and manage operational needs to minimize unnecessary expenses.
- Guide and develop team skills to achieve departmental and organizational goals.
- Conduct performance evaluations for direct reports, including introductory and annual reviews.
- Maintain an open-door policy to address team member concerns promptly.
- Facilitate monthly divisional/departmental staff meetings.
- Adhere to sustainability practices in line with HHM's EarthView program.
- Promote safe work habits, utilizing protective equipment and following MSDS and OSHA standards.
- Perform additional duties as assigned by management.
Qualifications:
A degree or certification from an accredited culinary institution is preferred. A minimum of 3 years of experience in a managerial role within an upscale or high-volume food service environment is required.
Work Environment:
This position requires flexibility in scheduling, including availability on weekends and holidays. Physical demands include standing for extended periods, walking, lifting up to 50 pounds, and various physical movements.
