Job Summary:

Private Listing seeks a seasoned Executive Sous Chef to oversee the culinary operation and drive our vision by utilizing leadership roadmaps with all managers. The ideal candidate will have experience in high-quality freestanding restaurants, excellent communication skills, and the ability to solve problems in high-stress situations.

Duties & Responsibilities:
  • Maintain quality of food and ensure consistency in delivery and standards.
  • Enhance food products presented to guests, proposing changes based on market demographics and guest needs.
  • Provide direction and implement plans, monitoring effectiveness and introducing changes in response to market shifts.

Administration:
  • Ensure weekly and monthly food cost forecasts are accurate to 5%.
  • Create and implement procedures for new programs with the Restaurant GM.
  • Conduct weekly/monthly departmental meetings.
  • Attend daily meetings as Kitchen representative.
  • Effectively use Restaurant 365 for kitchen-related purchases and food cost tracking.

Financial Aspects:
  • React to forecasted sales and profit shortfalls with the Restaurant GM.
  • Recommend and assist in implementing activities to stimulate short-term sales revenue.
  • Assist in pre-opening planning, including recruitment, scheduling, menu development, and staff training.
  • Maintain budget compliance and control divisional costs to ensure performance against budget.
  • Prepare a capital expenditure plan and provide backup for suggested projects.
  • Ensure timely payroll submission and vacation/sick day tracking with HR.

Employee Relations:
  • Monitor and identify training needs within the kitchen.
  • Develop formal training plans to meet identified needs.
  • Update training manuals and departmental induction manual as required.
  • Oversee cross-training of culinary/stewarding employees.
  • Ensure new employees are fully inducted into each department.

Guest & Public Relations:
  • Establish a personal and respectful rapport with regular guests.
  • Attend client functions as required.

Health & Safety:
  • Report and rectify potential and real hazards immediately.
  • Be conversant with fire and emergency procedures.
  • Ensure staff work safely and without risk of harm or injury.
  • Stimulate awareness of health and safety in kitchen tasks and activities.

General Duties:
  • Oversee shared staff scheduling.
  • Attend meetings, training sessions, or courses as required.
  • Assist fellow employees in similar jobs as necessary.
  • Ensure guest satisfaction by attending to their requests and inquiries efficiently.

We estimate the salary for this role to be around $80,000-$110,000 per year, depending on experience and qualifications.
