Department Summary: UCLA Lake Arrowhead Lodge is a unique Southern California meeting and retreat venue. Located high in the pine-studded San Bernardino Mountains on the tranquil shores of Lake Arrowhead, our 50-acre lodge provides meeting space and accommodations for groups from September through mid-June. During the summer, Bruins Woods Family Camp program runs for ten consecutive weeks, with up to 80 families attending each week. Position Summary:
Under the direction of the Executive Chef and Executive Sous Chef, the incumbent is responsible for providing team leadership to culinary staff in a high-volume kitchen. The tasks include assigning, motivating, and monitoring others' work in the production of multiple food products from a specified menu. The incumbent must prepare the most complex menu items and recipes according to culinary, production, and quality standards. The incumbent should accurately and appropriately utilize all production equipment and train and monitor others in its safe usage. Adherence to all food handling and sanitation guidelines is mandatory, and accurate paperwork, including temperature logs and production records, is to be maintained. The incumbent will assist management with recipe and menu development and follow established timelines for food production as required by customer flow. The incumbent should prepare meals (breakfast, lunch, and dinner) for approximately 30,000 guests during the conference and leisure guest season and 4,000 guests during our BRUIN WOODS season.

- 2+ years Professional kitchen experience in a comparable position within the hotel dining or restaurant sector. (required)
- Verbal and written communication in the English language, active listening, dynamic flexibility, critical thinking, multi-tasking, and time management. (required)
- Decision-making, reasoning, ability to develop original ideas to solve problems, operations analysis, and quality control analysis. (required)
- Effective interpersonal and work leadership skills to provide guidance and train kitchen staff on operational and technical guidelines and procedures. (required)
- Experience maintaining a high standard of productivity despite frequent interruptions. Ability to complete a large volume of diverse tasks efficiently, meeting established deadlines (required)
- Demonstrated skill in working as part of a team, collaborating with colleagues, and maintaining cooperative working relationships (required)
- Skill in adding and subtracting whole numbers, decimals, and fractions sufficient to adhere to production and customer flow parameters properly.Ability to measure dry and liquid foodstuffs in units of measurement to adhere to recipe and production requirements properly. (required)
- Detailed culinary knowledge of food inventory, recipes, menus, and production methods, including a strong understanding of culinary terminology. Previous experience developing, testing, and perfecting recipes and menu items. (required)
