FOOD SERVICE DIRECTOR

This position is responsible for directing and supervising the food service operations within the facility to assure each resident receives food that is stored and prepared in a safe, sanitary manner, that is palatable and that meets his/her nutritional needs.

QUALIFICATIONS:

* High School graduate or equivalent.
* Minimum of 1 year experience in a long term care setting preferred.
* Graduate of state approved food service supervisor course.
* Self-motivated, self-directed with leadership skills.
* Organizational skills.
* Ability to read and interpret menus.
* Knowledge of local, state and federal regulations regarding food service, sanitation and safety.
* Ability to direct others.
* Knowledge of record keeping, cost estimating and budgeting.
* Knowledge of supplies and equipment used by department and the care of this equipment.
* Ability to sort, check, count and verify numbers.
* Ability to read, speak, write and understand English.
* Ability to tactfully deal with facility personnel, residents, family members, visitors, etc.
* Meet all health requirements imposed by law.
* Basic data entry skills and the ability to type.
* Registered Dietitians encouraged to apply

DUTIES AND RESPONSIBILITIES:

* Plans, directs and supervises food service program (kitchen sanitation, food storage, preparation and delivery, nutritional assessments and care planning, menus, scheduling, budgets).
* Schedules meals and snacks and assures preparation according to pre-planned menus and sanitation guidelines.
* Orients, instructs and supervises other food service personnel. Assigns duties and evaluates work performance.
* Orders, organizes and stores food, supplies and equipment for use in department activities to assure proper sanitary storage/use, adequacy of supplies for food preparation and proper equipment availability for job task.
* Maintains food service budget. Keeps records of orders and costs involved.
* Works with facility's consultant registered dietician to implement recommended changes, assist in planning regular and special diet menus as prescribed by physicians and ensure that food is available for preparation by cooks.
* Coordinates work of dietary department with other department functions so as not to interrupt patient care or normal business functions.
* Actively participates in facility's Nutrition at Risk program to assure nutritional needs of residents are met.
* Inspects all equipment and systems regularly for proper functioning and safety. Notifies Maintenance immediately of repair needs.
* Properly and timely completes assigned MDS assessments and care plans.
* Actively participates in facility's Quality Assurance/Continuous Quality Improvement program to assure departmental activities are conducted in a manner consistent with local, state and federal regulations.
* Prepares and submits reports, as directed by Administrator.
* Able to be on call for emergencies.
* Able to attend department head meetings, workshops and institutes.
* Be able to keep adequate records.
* Follows and assures dietary personnel follow established safety and infection control procedures.
* Participates in all required inservice training. Provides and arranges educational opportunities for dietary personnel.
* Maintains safe working conditions and follows dress code.
* Reports to supervisor all complaints and grievances made by residents, families and visiting individuals.
* Adheres to and promotes Code of Conduct.
* All other duties as assigned.
