Scope of Position

The Assistant Pastry Chef is responsible for the production of the Pastry Department and for general kitchen supervision in the absence of the Executive Pastry Chef. He/she will oversee the day-to-day operations of the pastry kitchen which includes the preparation and production of all pastry and dessert items.


Position Requirements

  • Professional demeanor appropriate for a resort environment.
  • At least 3 years of experience in a supervisory or leadership role in a resort hotel or fine dining restaurant.
  • Strong restaurant operation background.
  • Excellent organizational, interpersonal, and administrative skills.
  • High volume and high-end pastry production experience needed for Banquets.
  • Demonstrate strong leadership skills within associates and the ability to communicate clearly and effectively with supervisor, associates, and customers.
  • Familiarity with chocolate decorations, truffles, bon bons, custom chocolate amenities, show pieces and comfortable teaching chocolate classes.
  • This position will require the operation of a motor vehicle.

Responsibilities

  • Assists the Executive Pastry Chef with managing all Pastry operations and preparation and ensures compliance with all Food & Beverage policies, standards, and procedures.
  • Estimates production needs and communicates the needs to kitchen Associates daily.
  • Complies with all local, state, and federal (e.g., OSHA, ASI and Health Department) regulations.
  • Supervise all phases of food production and service related to catering functions.
  • Assist with food ordering, pars, and executing proper storage of baking and pastry goods. Complete monthly food inventories with accuracy.
  • Operates and maintains all department equipment and reports malfunctions.
  • Maintain and enforce standards of good personal hygiene and proper uniform guidelines.
  • Monitor the compliance of company procedures, protection of property, adherence to departmental policies, and maintain and enforce a clean and sanitary work environment on a daily basis.
  • Assists in production of the weekly payroll, reports, forecasts, inventory and budget for food and beverage operations.
  • Performs daily walk-through of pastry kitchen to ensure full compliance with Department of Health regulations and Caribe Royale Orlando Hotel standards.
  • Assists in recruiting, interviewing, and hiring associates; conducts performance appraisals, coach and counsel, progressive corrective action, motivate, develop, and train.
  • Participates in departmental meetings and communicates a clear and consistent message regarding the departmental goals to produce desired results.
  • Perform any other reasonable duties as required by management.

Education

  • 2 -year degree from an accredited university in Food Service Management, Hotel and Restaurant Management, Hospitality, Business Administration, or related major.

Skills and Abilities

  • Ability to communicate in the English language. Second language is a plus.
  • Knowledge of proper chemical handling, cleaning techniques and use of equipment machinery.
  • Ability to work flexible schedules including holidays and weekends and able to perform multiple tasks.
  • Experience using computers and software programs such as Microsoft Office (Word, Excel, and Outlook).

Physical Requirements

  • Physical agility and ability to move quickly in confined spaces.
  • Requires standing/walking/reaching and bending throughout shift.
  • Ability to push/pull/lift to 50lbs.
  • Ability to multitask and give directions under pressure.
  • Work in areas of high heat and humidity.
