Executive Sous Chef

As a key member of our culinary team, the Assistant Sous Chef plays a vital role in ensuring the success of our kitchen operations. This management position focuses on achieving daily objectives, leading staff, and personally assisting in all areas of the kitchen, including food production, purchasing, and kitchen sanitation. The ideal candidate will contribute to guest and employee satisfaction while maintaining the operating budget.
Candidate ProfileWe are seeking a highly skilled and experienced professional with a strong background in culinary arts, food and beverage, or a related field. The successful candidate will possess a high school diploma or equivalent, with a minimum of 5 years of experience in the industry. Alternatively, a 2-year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or a related major, with 3 years of experience, is also acceptable.
Core Work Activities- Develop and implement new culinary concepts, ideas, and relationships to drive business growth.
- Maintain exceptional food handling and sanitation standards, ensuring a safe and healthy environment for guests and employees.
- Oversee the preparation and presentation of culinary items, ensuring high-quality standards are met.
- Lead and motivate the culinary team, providing guidance and coaching to ensure excellent service and quality.
- Collaborate with the restaurant and banquet departments to coordinate service and timing of events and meals.
- Communicate effectively with staff and management to ensure seamless operations and address any issues that may arise.
- Support the development of new menus, concepts, and promotions for the restaurant outlets and banquets.
- Prepare and cook a variety of dishes, either on a regular basis or for special guests or functions.
- Conduct quality checks on raw and cooked food products to ensure standards are met.
- Ensure the productivity level of employees is maintained, and tasks are completed efficiently.
- Coordinate the activities of cooks and workers engaged in food preparation, ensuring smooth operations.
- Utilize effective communication and interpersonal skills to lead, influence, and encourage others.
- Lead shifts, personally preparing food items and executing requests based on required specifications.
- Handle employee questions and concerns, providing guidance and support as needed.
- Identify the developmental needs of others and provide coaching, mentoring, or training to improve their knowledge or skills.
- Conduct employee performance appraisals, providing feedback and coaching to improve performance.
- Communicate performance expectations to employees, ensuring they understand their roles and responsibilities.
- Participate in an ongoing employee recognition program, recognizing and rewarding outstanding performance.
- Monitor employee progress towards meeting performance expectations, providing guidance and support as needed.
- Develop and implement strategies to prioritize, organize, and accomplish work effectively.
- Monitor staffing levels to ensure guest service, operational needs, and financial objectives are met.
- Manage food and supply inventories according to budget, ensuring efficient use of resources.
- Participate in department meetings, communicating a clear and consistent message regarding departmental goals and objectives.
- Provide exceptional customer service, exceeding guest expectations and ensuring their satisfaction.
- Manage day-to-day operations, ensuring quality, standards, and meeting the expectations of customers on a daily basis.
- Improve service by communicating and assisting individuals to understand guest needs, providing guidance, feedback, and individual coaching when needed.
- Set a positive example for guest relations, demonstrating a commitment to exceptional service.
- Strive to improve service performance, seeking feedback and coaching from management and colleagues.
- Handle guest problems and complaints, seeking assistance from supervisors as necessary.
- Empower employees to provide excellent customer service within guidelines.
- Provide information to supervisors, co-workers, and subordinates by telephone, in written form, email, or in person.
- Serve as a role model, demonstrating appropriate behaviors and work habits.
- Analyze information and evaluate results to choose the best solution and solve problems.
- Comply with loss prevention policies and procedures.
- Report malfunctions in department equipment.
- Attend and participate in all pertinent meetings.
- Encourage and build mutual trust, respect, and cooperation among team members.
