Job Summary

We are seeking a highly skilled and experienced Dietary Director to join our team at Lakeside Post Acute. The successful candidate will be responsible for overseeing the food preparation and service of our residents, ensuring that all meals are safe, appetizing, and meet the quality and quantity standards.

Key Responsibilities
  • Direct and participate in food preparation and service, ensuring compliance with approved menus and physicians' orders.
  • Maintain cost and work to meet budget guidelines, planning and assisting in preparation and service of holiday and special meals and functions.
  • Direct and supervise all dietary functions and personnel, hiring, orienting, training, disciplining, and terminating employees as necessary.
  • Assure that proper storage is available and that handling of food and supplies complies with current state and federal guidelines.
  • Process new diet orders and diet changes, keeping diet cards updated and maintaining sufficient staff to provide dietary services to the facility.
  • Assess resident food preferences and allergies, prepare dietary staff schedules, and address schedule changes.
  • Maintain the kitchen and food storage area in a safe, orderly, clean, and sanitary manner, transmitting orders for appropriate food and supplies.
  • Document and notify the dietician of menu changes, participate in QA and IDT meetings as assigned, and check trays for accuracy before delivery.
  • Inspect the Dietary Department regularly to ensure it is safe and sanitary, plan and present in-service education programs for the Dietary Department, and investigate on-the-job injuries and correct problems or retrain employees as necessary.
  • Ensure continued compliance with all federal, state, and local regulations, maintaining the security of the Dietary Department, and coordinating dietary services with nursing services and activities director.
  • Nutritional notes are to be completed monthly for all residents at nutritional risks, visiting all residents to conduct nutritional assessments and screenings, explain diets, record food preferences, and promote quality food service.
Requirements
  • High school diploma or equivalent, with a graduate degree in an approved dietary manager's course that meets state and federal care regulations.
  • One year of experience in a long-term care facility dietary department, with knowledge and experience with PCC preferred.
  • Ability to read technical procedures, policy and procedure manuals, recipes, and effectively present information and respond to questions from managers and employees.
  • Ability to apply concepts such as fractions, percentages, ratios, and proportions to practical situations, solve practical problems, and interpret a variety of instructions furnished in written, oral, diagram, or schedule form.
  • Maintain all required continuing education/licensing and remain in good standing with the Department of Public Health License and Certification Division at all times.
