Job Summary

We are seeking a highly skilled and experienced Executive Chef to join our team at the Peppermill & Western Village. As a key member of our culinary team, you will be responsible for leading the daily production of high-quality food products and ensuring exceptional customer satisfaction.

Key Responsibilities
  • Supervise and prepare high-quality food products for our outlets.
  • Lead by example, emphasizing day-to-day communication skills and commitment to excellent cuisine.
  • Manage food and labor costs within the department, identifying opportunities for improvement.
  • Work closely with the Purchasing Department to maintain proper par stocks, inventory control, and quality of purchased goods.
  • Coach, guide, train, and instruct assigned personnel in the proper performance of their duties.
  • Prepare reviews, evaluations, and other employee documentation, maintaining consistency, fairness, and respect.
  • Collaborate with upper management on menus, specials, and future developmental plans.
  • Ensure all culinarians maintain the highest levels of professionalism, including proper dress code and equipment maintenance.
  • Report any damaged or broken equipment to Engineering and upper management promptly.
  • Ensure all safety standards are followed and report any unsafe conditions to upper management.
  • Reward and recognize outstanding culinary employees when deserved.
  • Conduct employee meetings, pre and post shift meetings, and counseling sessions to maximize team morale and productivity.
  • Maintain a 'hands-on' philosophy and assist fellow culinarians as needed.
  • Create and institute recipe files, production schedules, specifications, and cost analysis sheets.
  • Implement creative menus and strive for excellence in our restaurant.
  • Drive sanitation issues in conjunction with the Asst. Executive Chef and/or Executive Steward.
Requirements
  • Three or more years of experience in hotel restaurant/casino outlets or individual restaurants in high-volume areas.
  • Familiarity with the particular cuisine for the area, including wok cookery or continental cuisine.
  • Culinary background with an emphasis on high-volume, quality cuisine, teambuilding, interpersonal, and managerial skills.
  • High school graduate or G.E.D, culinary apprenticeship, or culinary school graduate.
  • Ability to teach, train, and motivate culinary team members.
  • Working knowledge of computers, including Microsoft Word and Excel.
  • Background in pre and post-opening of hotel/casinos or major restaurants.
