Job Summary

The Biltmore Company is seeking an experienced and skilled Executive Sous Chef to join our culinary team. As a key member of our kitchen staff, you will be responsible for managing a team of up to 25 associates, ensuring that quality service standards and profit goals are met or exceeded.

Key Responsibilities

  • Manage a team of cooks, stewards, and other kitchen staff to ensure seamless food preparation and presentation.
  • Develop and implement menus, recipes, and plating instructions to maintain high-quality standards.
  • Work closely with the Executive Chef to develop seasonal menus and ensure inventory control.
  • Inspect food products daily to uphold quality standards and maintain a clean and sanitized kitchen environment.
  • Train and develop team members in preparation and presentation, as well as safety and sanitation habits.
  • Assist with banquets, in-room dining, and afternoon tea services as needed.
  • Perform other duties as assigned by the Executive Chef or other management staff.

Requirements

  • Bachelor's degree in Culinary Arts or related field, or equivalent experience.
  • Minimum of 5 years of experience in a fine dining or upscale setting, with progressively held culinary leadership positions.
  • Experience with inventory control, fiscal planning, and profit and loss reporting.
  • Excellent communication and interpersonal skills, with the ability to work effectively with diverse groups.
  • Knowledge of Microsoft Office and Excel spreadsheets.

Physical Requirements

  • Able to sit, stand, twist, bend, push, pull, walk, and lift up to 50 pounds on a regular basis for periods of up to 10 hours a day.
  • Able to work effectively in a kitchen environment with extremes in temperature (heat, cold, humidity) for an extended period of time.

Working Conditions

This position requires the ability to work in a fast-paced kitchen environment with frequent exposure to heat, cold, and humidity. The successful candidate must be able to lift up to 50 pounds and stand for long periods of time.
