Job Summary:

Universal Orlando Resort is seeking a highly skilled and experienced Sous Chef Pastry to lead the bakery team and oversee the production of high-quality baked goods and products for the resort.

Main Responsibilities:
  • Manage and develop the bakery program, including research and development of new products, ensuring sanitation, quality, and cost-effectiveness.
  • Provide coaching and development of hourly direct reports, ensuring they are properly trained and upholding policies and procedures.
  • Order food items needed for production, monitor recipes, and coordinate with other departments to meet food cost targets and minimize waste and variances.
  • Oversee daily practices of cleanliness and safe food practices, working closely with direct reports to uphold standards of the HACCP program.
  • Maintain mechanical maintenance of equipment, ensuring it is clean and working properly, and place work orders for repairs as needed.
  • Understand and actively participate in Environmental, Health & Safety responsibilities by following established UO policy, procedures, training, and team member involvement activities.
Requirements:
  • Culinary degree or Chef's Apprentice preferred.
  • 3+ years of experience in a high-volume bakery production facility.
  • 1+ year of supervisory experience.
  • Or equivalent combination of education and experience.
Preferred Qualifications:
  • Experience working with chocolate, laminated dough, sugar art, cake decorating, and scratch baking (leavened dough).
