The Culinary Department at Coastal Maine Botanical Gardens is seeking a dedicated Culinary Specialist.

We are in search of a Culinary Specialist who is eager to foster meaningful connections between people, plants, and nature in one of Maine's most picturesque locations.

The Culinary Specialist will be tasked with the preparation and cooking of a diverse array of dishes in accordance with established recipes and food safety protocols. This role supports our mission by utilizing local, seasonal, and garden-fresh ingredients to create a connection for our guests with the natural surroundings. In collaboration with the Culinary Director, the specialist will also contribute to menu creation, event planning, and culinary projects.

Year-round staff members are eligible for a comprehensive benefits package.

Compensation: $29 per hour (comprising a $20 base rate plus tips).

Work Schedule: 20 – 40 hours per week, typically from 9:00 am to 5:00 pm.

Key Responsibilities:

  • Prepare and cook a variety of menu items, adhering to recipes and portion control standards.
  • Assist in the planning and development of new dishes, specials, and menu items, taking into account seasonality, dietary needs, and guest preferences.
  • Perform food preparation tasks such as chopping, grilling, baking, sautéing, and frying.
  • Ensure that all food items are cooked and presented with consistent quality and aesthetics.
  • Work collaboratively with the kitchen team to manage food orders and ensure prompt service.
  • Monitor and maintain appropriate inventory levels of ingredients and supplies, notifying the Kitchen Manager of any shortages.
  • Comply with all food safety and sanitation standards, maintaining a clean and organized kitchen environment.
  • Operate and maintain kitchen equipment, reporting any issues for timely repairs.
  • Assist with cleaning and closing duties at the end of each shift, ensuring the kitchen is ready for the next team.
  • Contribute to a positive and cooperative team atmosphere, working effectively with kitchen staff.
  • Stay informed about industry trends, culinary techniques, and new ingredients to enhance skills and knowledge.
  • Support catered event planning and execution.
  • Engage in special projects during the off-season, including deep cleaning, menu updates, recipe development, and inventory management.
  • Promote exceptional service and ensure customer service standards are upheld.
  • Continuously update knowledge of Coastal Maine Botanical Gardens, including its layout and offerings, to provide accurate information and assistance to guests.
  • Participate in Gardens-wide initiatives, including special assignments.

Physical and Environmental Requirements:

  • Ability to stand for extended periods.
  • Capability to lift and carry heavy items up to 50 pounds.
  • Required to use hands for holding, carrying, handling, or feeling; must reach with hands and arms.
  • Occasionally required to bend, lift, stoop, reach, or climb.

Qualifications:

  • Previous experience as a culinary professional in a commercial kitchen setting.
  • Strong understanding of various cooking methods, ingredients, equipment, and procedures.
  • Knowledge of food safety and sanitation regulations.
  • Ability to perform under pressure and maintain composure during busy periods.
  • Creativity and innovation in food preparation and presentation.
  • Excellent communication and teamwork skills.
  • Flexibility in work schedule, including evenings, weekends, and holidays.
  • ServSafe certification is preferred.
