**Job Summary**

We are seeking a highly skilled and experienced Executive Sous Chef to join our team at Marcus Hotels. As a key member of our culinary team, you will be responsible for overseeing the preparation and presentation of food in our kitchens.

**Key Responsibilities**

1. **Train and Supervise Staff**: Assign specific duties to kitchen staff, select and train staff in menu preparation, and supervise daily kitchen operations.

2. **Food Preparation and Presentation**: Prepare and present food according to hotel standards, ensuring quality and consistency.

3. **Inventory Management**: Oversee the ordering, receiving, storage, and usage of food products, ensuring compliance with health department regulations.

4. **Cost Control**: Adhere to cost control procedures, ensuring efficient use of resources and minimizing waste.

5. **Safety and Sanitation**: Supervise daily safety and sanitation practices, maintaining a clean and safe kitchen environment.

6. **Staff Scheduling**: Schedule staff to ensure proper coverage and maintain payroll costs.

7. **Equipment Maintenance**: Assist in the repair and maintenance of kitchen equipment, ensuring optimal performance.

8. **Special Events**: Assist in the planning and execution of special events, VIP parties, and staff events.

**Requirements**

1. **Education**: High school education preferred, with apprenticeship or post-secondary education beneficial.

2. **Experience**: Managerial and production experience required in similar hotel or resort settings, with 3-5 years of management experience in high-volume food production.

3. **Language Skills**: Additional language skills and basic computer knowledge helpful.

4. **Knowledge and Skills**: Thorough knowledge of food products, standard recipes, and proper preparation, with ability to read, write, and speak English.

5. **Physical Demands**: Ability to lift and move goods weighing up to 200 lbs., with finger/hand dexterity to operate food machinery.
