Position Overview

The Sous Chef plays a crucial role in the effective management of food preparation and culinary operations, ensuring adherence to dietary standards and the nutritional quality of meals prepared under the guidance of the Executive Chef. This position fosters a positive and respectful workplace for all team members and serves as the acting chef in the absence of the Executive Chef.

Key Responsibilities:

  • Oversee kitchen production to maintain high standards of meal service quality.
  • Utilize classical cooking techniques to prepare menu items and recipes as directed by the Executive Chef.
  • Adhere to safe food handling practices, paying close attention to critical control temperatures.
  • Operate kitchen equipment proficiently and demonstrate expertise in knife skills.
  • Ensure timely execution of food production and plating, consistently meeting the expectations of residents.
  • Complete all food preparation and production tasks in readiness for service.
  • Communicate effectively with the Executive Chef or Dining Room Manager regarding any production issues that may arise.
  • Maintain accurate inventory and purchasing lists, ensuring all necessary items are procured.
  • Organize and conduct thorough checks of food storage areas to minimize waste.
  • Utilize production records and temperature logs to enhance future operations and purchasing decisions.
  • Conduct taste tests and evaluate food quality to ensure standards are met, focusing on presentation.
  • Supervise the cleanliness and sanitation of all cooking stations and equipment throughout the shift.
  • Perform pre- and post-service checks to ensure all production needs are met.
  • Lead kitchen staff during shifts in the absence of the Executive Chef.
  • Provide training and performance evaluations for kitchen team members under the Executive Chef's supervision.
  • Assist in menu development and recipe creation, contributing to culinary innovation.
  • Manage customer interactions effectively, addressing concerns and soliciting feedback to enhance service quality.
  • Demonstrate strong interpersonal skills, maintaining professionalism and openness to new ideas.
  • Communicate clearly and effectively, ensuring understanding and responsiveness.
  • Foster teamwork by balancing individual and team responsibilities, promoting a positive work environment.
  • Set ambitious goals and strive for excellence in all culinary endeavors.
  • Ensure adherence to safety and security protocols within the kitchen environment.
  • Maintain consistent attendance and punctuality, covering responsibilities in the event of absence.
  • Take initiative in professional development and seek opportunities for increased responsibilities.
  • Perform additional duties as assigned.

Qualifications:

  • High School diploma or equivalent required.
  • Culinary degree or certification preferred.
  • 3-5 years of experience in kitchen management within fine dining or food service environments.
  • ServSafe certification preferred.
  • Proficiency in English is required.

Physical Demands:

  • Ability to bend, stoop, and reach for ingredients and equipment.
  • Must be able to stand and walk for the majority of the workday.

  • Strong manual dexterity and coordination for handling kitchen tools.
