Job Summary

Key Responsibilities
  • Culinary Leadership: Supervise and manage a team of culinary staff, including sous chefs, cooks, and kitchen assistants, to ensure seamless execution of menu items and exceptional guest satisfaction.
  • Menu Development: Collaborate with our culinary team to develop and implement new menu items, specials, and promotions that meet the highest standards of quality and creativity.
  • Food Safety and Quality: Ensure that all food preparation and presentation meet the highest standards of food safety and quality, adhering to all relevant health and safety regulations.
  • Inventory Management: Oversee the management of food and beverage inventory, including ordering, receiving, and storing of supplies, to ensure optimal stock levels and minimize waste.
  • Financial Management: Manage the culinary budget, including labor costs, food costs, and other expenses, to ensure profitability and efficiency.
  • Staff Development: Provide training and development opportunities for culinary staff, including coaching, mentoring, and performance evaluations, to ensure that they have the skills and knowledge needed to excel in their roles.
  • Guest Satisfaction: Ensure that all guests receive exceptional service and have a memorable dining experience, responding promptly to guest feedback and concerns.
Requirements
  • Education: High school diploma or equivalent required; vocational or technical certification in culinary arts or related field preferred.
  • Experience: Minimum five years of management experience in a high-volume, fine dining restaurant or similar establishment, with a proven track record of success in culinary leadership and menu development.
  • Skills: Advanced knowledge of culinary operations, including menu planning, food preparation, and presentation; excellent leadership and communication skills; ability to work in a fast-paced environment and prioritize multiple tasks and responsibilities.
Certifications and Licenses
  • ServSafe Certification: Must obtain and maintain ServSafe certification within 90 days of employment.
  • Gaming License: May be required to obtain and maintain a gaming license at the discretion of the San Manuel Tribal Gaming Commission.
