Job Summary:

Ridgewells Catering is seeking a highly skilled and experienced Sous Chef to join our team. As a key member of our culinary department, the successful candidate will be responsible for the day-to-day management of our kitchen operations.

Key Responsibilities:

  • Assist the Executive Chef in maintaining the highest quality standards and ensuring that all food is prepared to the highest standards.
  • Manage the food production process, ensuring that food is prepared in an organized, efficient, and timely manner.
  • Meet all established food preparation deadlines through effective management of staff within the department.
  • Utilize high sanitation standards and monitor the overall cleanliness of the department to ensure a safe and healthy working environment.
  • Responsible for training staff and on-the-job instructions to ensure that all team members are equipped to perform their duties to the highest standard.
  • Maintain recipe standards to ensure that the food produced is consistently good and to specification.
  • Ensure that food is fresh, properly seasoned, and attractively displayed to meet the high standards of Ridgewells Catering.
  • Responsible for quality assurance of all foods produced by the department, ensuring that all products meet the required standards.
  • Responsible for adequate staff scheduling to meet workload requirements and monitor staff productivity to maximize efficiency.
  • Maintain food costs that have been predetermined by management and assist with inventory control to ensure that all food is used efficiently.
  • Compile, organize, and distribute food orders and labels as necessary for the department's daily production.

Requirements:

  • BS degree in culinary science or related certificate would be a plus.
  • 2+ years of experience as a Sous Chef is required.
  • Understanding of various cooking methods, ingredients, equipment, and procedures is essential.
  • Excellent record of kitchen and staff management is required.
  • Accuracy and speed in handling emergency situations and providing solutions is needed.
  • Familiarity with industry's best practices is desired.
  • Working knowledge of various computer software programs (MS Office, etc.) is needed.
