Job Summary:

We are seeking an experienced Chef (Emirati Cuisine Specialist) to join our culinary team. The successful candidate will be responsible for providing functional assistance and direction to the kitchen operation, interacting with clients, suppliers, and government officials, and coordinating functions and activities with other Food & Beverage department heads.

Main Responsibilities:
  1. Provides functional assistance and direction to the kitchen operation as assigned.
  2. Interacts with individuals outside the restaurant, including clients, suppliers, government officials, and other members of the local community.
  3. Coordinates functions and activities with other Food & Beverage department heads.
  4. Assists the Executive Chef and the management in supervising the functioning of all kitchen employees, facilities, and costs.
  5. Assists in controlling and analyzing quality levels of production and presentation.
  6. Ensures optimum performance in all areas assigned.
  7. Assists in the production, preparation, and presentation of all food items to ensure highest quality.
  8. Establishes and maintains effective employee relations.
  9. Conducts functions such as hiring, employee orientation, coaching, and suspension if necessary.
  10. Assists in conducting formal and on-the-job training sessions for kitchen employees.
  11. Assists in the preparation of menus and participates in pricing policy.
  12. Informs the Executive Chef and management of all relevant information in operational and personal matters.
  13. Supervises the service of all food items in the Outlets.
  14. Ensures that correct workplace health and safety regulations are maintained.
  15. Ensures that correct ordering and receiving procedures are followed.
  16. Checks all food preparation to determine the type and quality of items to be prepared.
  17. Ensures that all staff handles and uses kitchen utensils and equipment properly.
  18. Assists in composing new recipes and menu ideas.
  19. Controls cooking procedures, portioning, garnishing, and presentation of all dishes.
  20. Handles guest complaints or problems promptly.
  21. Maximizes employee productivity to minimize payroll costs.
Requirements:
  • At least 7-10 years post-apprenticeship experience in a similar industry or 4-5 star establishment.
  • Able to assist the Executive Chef in all areas of rostering, management, ordering, and receiving and cost control.
