Position Overview:
The primary objective of this role is to meet marketing, sales, profitability, and quality service targets for the Food & Beverage Department by crafting and implementing effective marketing strategies. This includes preparing and managing the budget, delivering exceptional service to guests, and applying leadership and managerial skills efficiently.

Key Responsibilities:

  • Achieve food and beverage sales targets by executing marketing strategies and managing costs effectively.
  • Develop a market plan aimed at increasing market share through analysis of sales data and competitive surveys.
  • Implement the market plan by executing agreed strategies, utilizing effective management practices to set goals, evaluate results, and adjust strategies as necessary.
  • Ensure that menu engineering aligns with marketing objectives by selecting menu items and recommending pricing based on market trends.
  • Maintain high marketing and merchandising standards across operations.
  • Meet profitability targets for dining establishments, bars, catering, and room service while ensuring quality guest service.
  • Develop the food and beverage budget by reviewing recommendations and trends, preparing a comprehensive budget package, and presenting it to senior management.
  • Monitor revenues and costs daily, taking corrective actions as needed to adhere to the approved budget.
  • Control costs by following operational standards for forecasting, budgeting, scheduling, payroll management, and other expense management systems.
  • Ensure all departments operate in accordance with established food and beverage standards.
  • Maintain oversight of food, beverage, and supply costs and inventory by adhering to purchasing and inventory control standards.

Training and Development:
The Food and Beverage Operations Assistant will also ensure that training goals are consistently met:

  • Facilitate training programs utilizing 'train the trainer' techniques.
  • Monitor training effectiveness and follow-up to ensure all employees receive ongoing training.
  • Ensure management personnel receive necessary training.

Catering Sales:
This role will also focus on achieving catering objectives by ensuring that marketing and sales strategies are effectively executed to maximize sales while adhering to customer service standards:
