Job Summary

Cobble Hill LifeCare is seeking a highly skilled Food Service Manager to oversee the evening shift operations in our kitchen. As a key member of our team, you will be responsible for ensuring that meals are prepared in accordance with current applicable federal, state, and local standards, guidelines and regulations with our established policies and procedures.

The ideal candidate will have a strong background in food preparation and management, with experience working with a chef in an accredited institution. You will be responsible for supervising kitchen operations, delegating tasks to cooks and cook helpers, and consulting with the chef and director to ensure proper tasks are being completed for food preparation, resident requests, accuracy of tray items, compliance with medical diagnoses, menu changes, etc.

Responsibilities include:

  • Supervising kitchen operations and meal preps in accordance with the planned menu and standardized recipes.
  • Delegating responsibilities to the cook/Cook's helper regarding meal preparation.
  • Consulting with Chef, Director, and others on the team to ensure proper tasks are being completed for food preparation, resident requests, accuracy of tray items, compliance with medical diagnoses, menu changes, etc.
  • Testing prepared food for temperature, appearance and palatability.
  • Attending and participating in managers' meetings.
  • Facilitating in-service trainings.
  • Collecting and recording all relevant data, such as temperatures, special devices, etc.
  • Ensuring that the team follows safety regulations as well as maintaining clean storage areas and that proper food handling equipment techniques are used.
  • Performing other duties as assigned by Chef or Food Service Director to ensure proper care of residents and efficient operation of the department.
  • Assuming responsibility and accountability in the absence of the Chef and Sous Chef Chef.

Requirements include:

  • Must have worked with a Chef as a cook for at least (1) year in an accredited institution.
  • Food Handlers certification required. ServSafe certification preferred, but not required.
  • Knowledge of operating equipment used in food preparation.
  • Must be able to read, understand, and speak fluent English.
  • Ability to follow recipes and production sheets and make calculations when adjusting recipes and menu portions.
  • Knowledge of therapeutic diets, portion control, and dietary practices and procedures.
  • Proven leadership ability and willingness to work harmoniously with others.
