We are seeking a highly skilled Culinary Manager to join our team at Entertainment. As a key member of our culinary team, you will be responsible for maintaining a high level of food quality, ensuring a safe work environment, and leading a team of culinary professionals.

Key Responsibilities
  • Maintain a strong understanding of all restaurant and culinary systems and operations.
  • Provide direction, coaching, and leadership to all culinary team members, including training them on safety and sanitation, health inspection standards, and company policies and procedures.
  • Establish and communicate goals and achievements to the General Manager.
  • Ensure the maintenance of the kitchen, including cleanliness, organization, and sufficient supply levels of tools for the culinary team.
  • Write schedules for all culinary team members, preparing the park for events and anticipated walk-in business.
  • Ensure 100% adherence to all aspects of food quality.
  • Help maintain a safe work environment, including 100% use of safety tools.
  • Ensure maintenance of food storage area sanitation and standards.
  • Ensure all kitchen areas meet local and state health code regulations.
  • Order and verify receipt of all food and supply products for the kitchen.
  • Direct the planning, implementation, and culinary team training for all menu and specials rollouts in the restaurant, adhering to specifications, presentation, and standards.
  • Communicate effectively with vendors, addressing food, supply, delivery, or scheduling concerns as needed.
  • Interview and hire all culinary team members, maintaining appropriate staffing levels through seasonality of the business.
  • Complete all BOH performance appraisals, recommending merit increases to the GM.
  • Meet the restaurant's financial goals, including cost of sales, labor, and hiring, developing, and retaining top team members.
Requirements
  • Standing for long periods, frequent bending, and turning.
  • Lifting 40 lbs.
  • Ability to work in a fast-paced environment.
  • Ability to withstand extreme hot/cold temperatures.
