Kitchen Organization and Equipment Maintenance:
- Ensure staff are proficient in operating, maintaining, and thoroughly cleaning all kitchen equipment, including fryers, stoves, food processors, mixers, slicers, and wood-fired ovens.
Menu Innovation:
- Keep the menu vibrant and appealing by staying updated on culinary trends, leading to regular updates and the introduction of daily or seasonal specials.
- Uphold a high standard for all dishes leaving the kitchen, with established accountability measures.
- Maintain an overall food cost of 18%, with the capability to accurately report on each menu item.
- Ensure that new menu items are costed prior to their introduction.
Operational Management:
- Guarantee that all products are sourced, received, and stored according to company standards.
- Develop the back-of-house schedule and manage a weekly labor cost of 20% for the entire back-of-house team, collaborating with management and utilizing relevant tools.
- Complete daily and weekly orders, as well as quarterly inventory assessments.
- Supervise the execution of preparation lists and ensure adherence to opening and closing procedures.
- Ensure that recipes and all instructional documents for the back-of-house are created and maintained in a digital format for easy access and printed for kitchen reference.
- Promote and expect a culture of QUALITY, CONSISTENCY, and SPEED.
