Job Title: Sous Chef

Alyeska Resort is seeking a highly skilled and experienced Sous Chef to join our culinary team. As a key member of our kitchen staff, you will play a pivotal role in overseeing and coordinating the culinary operations of our resort.

Responsibilities:
  • Collaborate with our culinary team to prepare and present high-quality dishes that exceed our guests' expectations.
  • Supervise and train kitchen staff to ensure adherence to quality standards, portion control, and presentation.
  • Estimate food requirements and manage food and labor costs to ensure efficient operations.
  • Requisition food and kitchen supplies as needed to maintain a well-stocked kitchen.
  • Inspect and report on safety hazards related to kitchen equipment and ensure compliance with health and safety regulations.
  • Provide guidance and support to culinary personnel to enhance their culinary expertise.
  • Participate in meat preparation, carving, and dish preparation, including sauces, during busy periods and banquets.
  • Conduct regular inspections of refrigerators to prevent contamination and food wastage.
  • Anticipate daily production requirements and delegate tasks accordingly to ensure smooth operations.
  • Maintain kitchen cleanliness and ensure stock availability to maintain a high level of service.
  • Assume kitchen responsibility in the absence of the Chef.
Requirements:
  • High School diploma or equivalent.
  • Five years of relevant experience and/or training; or an equivalent combination of education and experience.
  • Preferably, possess a culinary apprenticeship or formal culinary training.
  • Proficiency in reading and interpreting documents such as menus, recipes, safety guidelines, operating manuals, and procedure instructions.
  • Effective written and verbal communication skills to interact with customers and team members.
  • Strong mathematical abilities to calculate figures and percentages, applying basic algebra and geometry concepts.
  • Problem-solving capabilities to address practical issues and handle various situations with limited standardization.
  • Competency in interpreting instructions provided in written, oral, diagram, or schedule format.
  • Must have or obtain a ServSafe certification during the introductory period.
