The Cook III position entails executing complex technical tasks in food service production, with responsibilities that include preparing, cooking, portioning, distributing, and serving meals tailored to both standard and modified dietary needs.

This role also involves providing direction, training, and oversight to team members, significantly impacting the quality of life and safety of our residents.

Management has recognized the importance of this role in establishing a benchmark for job classification, compensation, and responsibilities, facilitating the swift creation or reclassification of cook positions to enhance staffing and training efforts.

Key Responsibilities:

Maintain consistent attendance according to a predetermined schedule, which may include specific shifts, rotation schedules, extended hours, and/or overtime as required by agency policies, while performing additional assigned tasks.

Prepare, season, cook, and assemble meals for both standard and modified diets, utilizing appropriate equipment and utensils in a sanitary manner.

Prepare and portion food for special diets and modified textures, adhering to food service protocols and medical directives.

Ensure timely preparation of scheduled snacks and maintain an adequate supply of snack items.

Adhere to Central Kitchen Operation Manual Procedures, ensuring compliance with food handling standards as per state and federal regulations.

Safely operate and maintain all food service equipment, providing guidance and training to others on proper usage and maintenance.

Calculate necessary food quantities for preparation and delivery, using standardized menus and recipes to ensure adequate supply and minimize waste.

Safely prepare and distribute meals in accordance with food service policies, including driving a delivery vehicle when necessary.

When required, serve meals, including special diets, following established food service procedures.

Maintain cleanliness and inspect designated areas for sanitation, including proper cleaning of equipment and correct storage of leftovers.

Follow sanitation and storage protocols for dishes and food service equipment, ensuring cleanliness in kitchen areas, stockrooms, food prep areas, and other locations.

Provide training and supervision to others in food preparation, meal assembly, service, equipment operation, and food safety procedures.

Train team members on the safe and proper use of food service equipment to prevent injuries and equipment damage.

Complete necessary documentation, including equipment work orders and notes on subordinate cooks, while reporting any kitchen equipment needing repair or replacement and supplies required through the appropriate channels.

Assist in suggesting improvements for operational efficiency to the supervisor.

Perform additional duties to support the overall operations of the food service department, which may include working in the facility canteen, handling cash securely, receiving deliveries, and managing communication effectively.

Assigned responsibilities may involve active participation in disaster response, recovery, or continuity of operations activation, potentially requiring adjustments to shift patterns or locations.


Knowledge, Skills, and Abilities:

Understanding of food preparation techniques, food storage standards, and sanitation regulations.

Knowledge of specialized diets and food textures.

Proficiency in cooking, baking, and utilizing food preparation appliances and equipment, such as slicers, mixers, grinders, and food processors.

Ability to prepare large quantities of food according to specific dietary and textural guidelines.

Capability to interpret and follow recipes accurately.

Ability to serve food, maintain cleanliness in dining and food preparation areas, and keep precise records.

Effective communication skills in English, both written and verbal.

Basic math skills related to cooking and food preparation.

Physical ability to lift a minimum of 25 pounds and perform tasks that require bending, reaching, standing, and walking on hard surfaces for extended periods.

Ability to work in varying temperature conditions and possess the sensory capabilities to smell, taste, and see.

Capacity to collaborate effectively with colleagues and residents.

Ability to train, supervise, and guide others in food preparation, equipment usage, and sanitation practices.
