The Senior Culinary Specialist role encompasses executing complex technical tasks in food service production, being responsible for the preparation, cooking, portioning, distribution, and serving of food tailored to both standard and modified diets and textures.

This position also involves providing guidance, training, and oversight to junior staff, significantly contributing to the quality of life and safety of residents.

Management has acknowledged the importance of establishing this role as a benchmark to improve consistency in job classification, compensation, responsibilities, and duties.

Furthermore, this will facilitate the rapid creation and/or reclassification of culinary positions to this benchmark, potentially aiding in filling current vacancies and enhancing training and supervision of kitchen personnel.

Key Responsibilities:

Maintain consistent attendance according to a predetermined schedule, which may include specific shifts, rotation schedules, extended hours, and/or overtime as per agency policies, while performing other assigned tasks.

Prepare, season, cook, and assemble meals for both standard and modified diets using appropriate equipment and utensils in a hygienic manner.

Prepare and portion food for special diets and modified textures, adhering to food service protocols to comply with dietary guidelines.

Prepare scheduled snacks and maintain an adequate supply of snack items.

Adhere to Central Kitchen Operation Manual Procedures and ensure proper food handling in accordance with food service protocols and state and federal regulations.

Safely operate and maintain all food service equipment. Provide training and supervision to others on the safe operation and maintenance of food service equipment.

Calculate the necessary food quantities for preparation and delivery to designated service areas using standardized menus and recipes to ensure sufficient food supply, minimize callbacks, and deliver accurate meals to residents.

Safely and hygienically prepare and distribute food according to service policies, including driving a delivery vehicle when required.

When necessary, serve food, including special diets, following established food service procedures.

Inspect and maintain designated areas for cleanliness, including cleaning equipment, utilizing proper food handling techniques, and correctly storing leftovers.

Follow sanitation and storage protocols for dishes and food service equipment, ensuring cleanliness in kitchen areas, stockrooms, food prep areas, and satellite locations.

Provide training and oversight to others in food preparation, meal assembly and service, equipment usage, and food service sanitation and safety protocols.

Instruct junior staff on the proper and safe use of food service equipment to reduce the risk of injuries and equipment damage.

Complete necessary documentation and reports such as equipment work orders and notes on subordinate staff. Report kitchen equipment needing repair or replacement and supplies required through designated channels. Assist in suggesting improvements for operational efficiency to management.

Perform additional duties to ensure the overall functionality of the food service department, which may include working in the facility canteen, handling cash securely, managing the ingredient room, receiving deliveries, and promptly answering calls while conveying messages clearly and positively.

Assigned duties may involve active participation in disaster response, recovery, or COOP activation, which may require an alternate shift pattern and/or location.

Knowledge, Skills, and Abilities:
Understanding of food preparation techniques, food storage standards, and sanitation regulations.

Knowledge of specialized diets and textures.

Proficiency in cooking, baking, and utilizing food preparation appliances and equipment such as slicers, mixers, grinders, and food processors.

Expertise in operating and sanitizing food service equipment.
Ability to prepare large quantities of food following specific dietary and textural guidelines.
Ability to interpret and follow recipes.
Capability to serve food, clean dining and food preparation areas, and maintain accurate records.
Ability to comprehend and communicate effectively in English.
Ability to follow written and verbal instructions.
Capacity to perform basic mathematical calculations related to cooking and preparation.
Ability to lift a minimum of 25 pounds.
Capability to bend, reach, stand, and walk on hard surfaces for extended periods.
Ability to work in varying temperature conditions.
Capability to smell, taste, and see.
Ability to collaborate effectively with colleagues and residents.
Capacity to train, supervise, and guide others in food preparation, equipment usage, and sanitation.
