POSITION SUMMARY:
The Pastry Sous Chef collaborates with the Pastry Chefs to oversee and manage designated kitchen operations, ensuring adherence to the restaurant's high standards of culinary excellence and hygiene.

KEY RESPONSIBILITIES:

  • Foster teamwork to enhance guest satisfaction, service quality, operational efficiency, and employee morale.
  • Guarantee that all culinary creations and products are consistently prepared and presented in line with the restaurant's established standards.
  • Supervise kitchen staff to maintain a clean, sanitary, and organized workspace at all times.
  • Effectively communicate with team members to ensure that quality standards are met.
  • Assist in meeting company goals related to sales, quality, and cleanliness through effective training and a positive work environment.
  • Organize daily tasks with Chef de Parties, delegating responsibilities to commis and externs to optimize workflow.
  • Commit to the ongoing development of team members in all aspects of culinary knowledge.
  • Prepare necessary documentation as requested by supervisors in a timely and organized manner.
  • Manage labor scheduling based on anticipated business needs while ensuring adequate staffing and cost efficiency.
  • Ensure that all received products meet quality standards and comply with the restaurant's receiving protocols.
  • Understand and implement bakery policies regarding personnel management, in collaboration with Human Resources.
  • Encourage a culture of mentorship among team members to facilitate mutual growth.
  • Communicate daily progress and upcoming plans with the culinary team.
  • Maintain equipment and workspace cleanliness, adhering to preventative maintenance protocols.
  • Participate in scheduled meetings, contributing ideas for improvement and addressing any operational concerns.
  • Comply with all relevant health, safety, and labor regulations affecting the restaurant and its staff.
  • Perform additional duties as assigned.

QUALIFICATIONS:

  • 3-5 years of experience in similar culinary environments.
  • High School Diploma or equivalent.
  • State Health Certification.
  • Strong interpersonal skills with clear communication abilities in the primary language of the establishment.
  • Capacity to positively influence others.
  • Able to thrive in a fast-paced, dynamic environment.
  • Physical ability to reach, bend, stoop, and lift up to 50 lbs.
  • Capability to stand for extended periods (up to 12 hours).
  • Frequent exposure to nuts, nut flour, and various fruits.
