Assistant Pastry Chef

The Assistant Pastry Chef plays a crucial role in aiding the Pastry Chef with the design and execution of the pastry menu, as well as managing all facets of food production, including quality control, cost management, and staff relations within the pastry division.

Ideal candidates will possess a minimum of three years of leadership experience in a high-volume culinary setting and demonstrate proficiency in both traditional and modern French pastry techniques, applicable in both restaurant and banquet environments. A comprehensive understanding of restaurant operations, meticulous attention to detail, and a strong sense of responsibility and organization are essential. The ability to motivate and inspire team members to achieve excellence and exceed guest expectations is paramount.

Essential Skills & Requirements:

  • Flexibility in scheduling, including availability for evenings and weekends
  • Proven leadership capabilities to guide a team (training, mentoring, recruitment, and discipline)
  • Deep passion for both classic and innovative pastry techniques
  • Capacity to manage multiple tasks in a fast-paced setting
  • Focus on profitability, quality assurance, and cost management (including monthly P&L reviews and purchasing)
  • Oversee all aspects of kitchen operations and production
  • Uphold the standards established by The Dinex Group


Competencies & Qualifications:

  • Minimum of three years in a high-volume or upscale dining pastry environment, with at least one year in a managerial role
  • Extensive knowledge of pastry techniques, including the principles of starches, fats, sugars, liquids, eggs, and flavorings
  • Able to perform under pressure in a dynamic, high-volume environment
  • Strong interpersonal skills to foster positive interactions with supervisors, management, colleagues, and the public, promoting teamwork and professionalism
  • Proficient in producing a high volume of quality work efficiently and accurately
  • Ability to read and interpret business publications, professional journals, technical procedures, or regulations
  • Skilled in writing reports, business correspondence, and procedural documentation
  • Competent in calculating figures and amounts such as discounts, proportions, and percentages
  • Commitment to practicing food safety standards
  • Ability to lead, train, and motivate a team effectively
  • Strong organizational skills
  • Effective time management abilities
  • Culinary training or degree preferred, but not mandatory
  • Strong English communication skills required; proficiency in French and Spanish is a plus
