Job Summary

We are seeking a highly skilled and experienced Sous Chef to join our team at Sushi-San Lincoln Park. As a Sous Chef, you will be responsible for leading the kitchen staff and ensuring the smooth operation of our restaurant's back-of-house (BOH) shifts.

Key Responsibilities
  • Lead BOH Shifts: Run effective and efficient BOH shifts, ensuring adequate inventory levels of food and supplies, and supervising the kitchen, dish, and all other BOH teams.
  • Pre-Shift Meetings: Lead BOH pre-shift meetings and participate in line, temp, and cooler checks, as well as food tastings for the shift.
  • Recipe Maintenance: Partner with the General Manager and/or designated managers/chefs to regularly review and maintain recipe books.
  • Quality Control: Perform regular line checks throughout the day to ensure the quality of all menu items.
  • Purchasing and Inventory: Purchase and order food products and supplies for the restaurant, including daily product orders.
  • Food Cost Control: Assist with tracking and controlling food cost.
  • Communication: Ensure effective communication of food production and timing issues, needs, and special requests between the front-of-house (FOH) and BOH.
  • Team Development: Partner with the General Manager and management team to interview, hire, onboard, train, supervise, and develop all BOH employees and teams as needed.
  • Teamwork and Customer Service: Model and promote teamwork across all teams, using tact and good judgment when dealing with challenges pertaining to guests, vendors, and employees.
  • Flexibility: Work a variety of days and shifts, including early mornings, late nights, and weekends, at multiple sites with or without overnight travel, as needed.
Requirements
  • Experience: 2-3 years of sous chef experience in a full-service restaurant.
  • Leadership: Ability to lead and manage the kitchen staff.
