Job Title: Kitchen Operations Specialist

At Eataly North America, we are seeking a highly organized and detail-oriented Kitchen Operations Specialist to join our team. This role will be responsible for overseeing the day-to-day operations of our kitchen, ensuring that all tasks are completed efficiently and effectively.

Key Responsibilities:
  • Partner with the Business Planning Analyst and BOH Leadership Team to oversee restaurant margins, focusing on BOH labor and food costs.
  • Oversee BOH ordering, receiving, and distributing products to ensure timely and accurate delivery.
  • Collaborate with the Warehouse Team to maintain a well-organized kitchen storage system and ensure that all products are properly received and distributed.
  • Manage BOH invoices, credits for returns, and submit invoices for processing to the Inventory Control Associate.
  • Communicate with vendors to negotiate special orders, discounts, and ingredient sourcing.
  • Manage transfers, requisitions, and other BOH in-store product movements, ensuring that all products are properly accounted for.
  • Oversee monthly inventories, assisting the Chefs' Team in counting products and entering data into the system.
  • Maintain order guides, logs, transfers sheets, and SOPs for BOH outlets.
  • Support the Executive Chef and Chefs' Team with daily BOH operations.
  • Enter and maintain recipes into Eataly's database software.
  • Work with the Corporate Product Team to set up new items and vendors for Eataly's database software.
  • Prepare and generate reports to assess price changes, recipe optimization, margin analysis, consumption of products, and sales vs waste contribution.
  • Manage BOH employee clock-ins, clock-outs, and break times on a per-shift basis, engaging with HR and Payroll departments on correct tip distribution.

Requirements:

  • 2+ years of experience in kitchen operations.
  • Exceptional organizational skills and meticulous attention to detail.
  • Demonstrated flexibility to adapt to a dynamic, ever-changing work environment.
  • Culinary experience in professional kitchens.
  • Good knife skills and finger dexterity to use small tools and utensils adeptly.
  • Excellent verbal and written communication skills.
  • Working knowledge of basic computer programs, i.e. Microsoft Excel, Word, etc.
  • Degree from a culinary arts training program preferred.
