Job Summary:

The Prep Cook is a key member of our culinary team, responsible for preparing and cooking food items in assigned stations for banquets and restaurant meals. This role requires attention to detail, strong communication skills, and the ability to work in a fast-paced environment.

Key Responsibilities:

  • Food Preparation: Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist.
  • Station Setup: Set up stations required to service all banquet functions and menu items.
  • Inventory Management: Check pars for shift use, determine necessary preparation, freezer pull, and line set up. Note any out-of-stock items or possible shortages.
  • Quality Control: Check all food for tastes, temperature, and eye appeal.
  • Service Standards: Constantly spot check food and quality service during all meal periods to ensure that foods served meet our portion control and quality standards.
  • Cleaning and Sanitation: Wash and disinfect kitchen area, tables, tools, knives, and equipment.
  • Communication: Maintain an open line of communication at all times with any and all departments.
  • Event Preparation: Reviews Production sheets, BEOs (Banquet Event Orders), and Par sheets in order to prepare for events.
  • Food Presentation: Produces all hot and cold food presentations for buffets, banquets, and a la carte.
  • Team Support: Helps out on pantry, hot line, and/or omelet station when needed.
  • Requisition and Inventory: Complete requisition for food on a daily basis.
  • Compliance: Maintain strict compliance of company recipe cards and procedures.

Requirements:

  • Knowledge and Skills: Knowledge of food preparation, menu concepts, sanitation regulations, and safety measures.
  • Communication: Ability to communicate satisfactorily with guests, management, and co-workers.
  • Education: High School Degree or Equivalent. Degree from Culinary Program preferred.
  • Experience: Minimum of 6 months experience in food preparation.
  • Certifications: Must possess a valid Food Handler's card.
