Job Summary

We are seeking a highly skilled Culinary Operations Manager to oversee the successful operation of culinary services in our senior living healthcare facility. This key leadership position will be responsible for menu planning, hands-on cooking, preparation, presentation, and service.

As a Culinary Operations Manager, you will work closely with the nutrition team to develop and implement menus that meet the dietary needs and preferences of our patients and residents. Your leadership and expertise will ensure that our culinary team contributes to the overall health, healing, satisfaction, and recovery of patients and residents.

Key Responsibilities
  • Menu Planning and Development: Create and implement menus that meet the dietary needs and preferences of our patients and residents.
  • Kitchen Management: Oversee all culinary operations, including hands-on cooking, preparation, presentation, and service.
  • Supervise Staff: Supervise kitchen staff, including line cooks, and other kitchen personnel.
  • Training: Provide training and development for kitchen staff to maintain high standards.
  • Quality Control: Ensure all dishes are prepared to the highest standard and are visually appealing.
  • Consistency: Maintain consistency in food preparation and presentation across all dishes.
  • Inventory and Budget Management: Manage inventory levels of ingredients and supplies, placing orders as needed.
  • Cost Control: Monitor food costs and adjust portions or menus to meet budgetary requirements.
  • Waste Management: Implement procedures to minimize food waste and improve efficiency.
  • Compliance and Safety: Ensure the kitchen complies with health and safety regulations, maintaining cleanliness and sanitation standards.
  • Food Safety: Implement and enforce food safety practices, including proper storage and handling of ingredients.
  • Collaboration and Communication: Collaborate with the nutrition team and other departments to ensure seamless operations.
  • Customer Interaction: Occasionally interact with residents to receive feedback and address any concerns.
Requirements
  • Minimum 3 years experience in a similar role.
  • Preferred College Graduate - Associates or bachelors degree in Culinary.
  • Preferred CEC (Certified Exec Chef).
  • Preferred CDM (Certified Dietary Manager).
  • Preferred Hospital or Senior living Experience - familiarity with IDDSI / Therapeutic Diets / Modified Diets.
  • ServSafe manager Certification.
  • WA Food handler card.
  • Ability to provide documents for work authorization.
Physical and Sensory Requirements

This role requires mobility to stand and walk extensively during meal preparation and service. Lifting, carrying trays, and boxes, up to 25 pounds. Pushing/Pulling Food Hot Boxes up to 50 pounds. Bending and stooping for access to carts, food, trays, and other kitchen equipment. Manual dexterity for the use of kitchen utensils and tools. Visual acuity for reading menus, labels, and directions. Hearing ability to respond to verbal communications. Exposure to hot and cold temperatures. Taste and Smell to assess food quality, freshness, and adherence to dietary requirements. Ability to distinguish colors for food presentation.
