ROLE OVERVIEW:

Reporting to the Restaurant Leader, the Beverage Operations Manager will focus on ensuring uniformity across all beverage offerings, optimizing costs through strategic purchasing, and managing case deals. This individual will possess a deep understanding of both classic and contemporary cocktails and will enjoy exploring new ideas, techniques, and pairings. They will thrive as an influential leader, dedicated to developing and mentoring their team.

KEY RESPONSIBILITIES:

  • Champion the brand's vision and values, contributing to a culture of positivity and high standards where all team members strive for excellence in every task.
  • Create a warm, welcoming environment filled with positivity for both guests and staff.
  • Uphold our standards consistently, treating everyone with courtesy and respect.
  • Conduct monthly inventory checks: ordering, price updates, maintaining accurate par levels, and managing overpours.
  • Ensure bar cleanliness and maintain checklists.
  • Quality Control: guarantee that drinks are crafted correctly and garnishes are fresh.
  • Monitor drink preparation times, aiming for a 2-minute standard, and identify areas for improvement.
  • Set sales goals for cocktails, wine, and beer, and devise creative strategies to encourage upselling and promotional ideas.
  • Oversee music, lighting, and entertainment, coordinating with DJs to ensure appropriate ambiance.
  • Facilitate staff education on new items, pairing discussions, and enhance wine knowledge and service.
  • Possess extensive knowledge of mixing classic and modern cocktails.
  • Train and develop the bar team.
  • Adhere to all standards and expectations set by management and leadership.
  • Manage shift schedules to control labor costs.
  • Oversee bar inventory to manage beverage costs effectively.
  • Maintain accurate records on beer counts, draft usage, waste, inventory, bar costs, and P.O.S.
  • Conduct weekly inventories to ensure adequate beverage and supply levels.
  • Direct purchasing operations for ingredients and liquor, including supplier negotiations.
  • Foster a positive experience for all guests and team members by being professional, focused, and reliable.
  • Maintain a clean, polished, and presentable workspace.
  • Manage guest interactions and resolve conflicts effectively.
  • Implement and adhere to Health and Safety policies as outlined in the Health and Safety Program.

QUALIFICATIONS:

  • 3-4 years of supervisory experience in an upscale dining environment.
  • Deep understanding and hands-on experience in cocktail culture and drink infusion.
  • Strong attention to detail with the ability to articulate food and beverage menu details clearly.
  • Experience in creating syrups, garnishes, and developing cocktail menus.
  • Solid knowledge of wine, spirits, and beverages, along with food knowledge.
  • Strong business acumen, including understanding budgets and operating costs.
  • Ability to manage multiple priorities and meet strict deadlines.
  • Embody PLANTA's proactive attitude, demonstrating passion and dedication in all tasks.
  • Thrive in a collaborative team environment.
  • Exhibit strong interpersonal and problem-solving skills.
  • Ability to perform well under pressure in a fast-paced setting.
  • Bachelor's Degree or Higher Education Qualification. Degree/Diploma in Hospitality, WSET, Prudhomme, or equivalent is considered an asset.
  • Results-oriented and exceptionally organized.
