Job Summary:

Mercado Montclair is seeking an experienced Chef de Cuisine to oversee kitchen operations and lead our dinner service team. As a key member of our culinary team, you will be responsible for ensuring the highest quality standards are met in all aspects of food preparation and presentation.

Key Responsibilities:

  • Lead Kitchen Operations: Run daily kitchen operations, including menu planning, inventory management, and staff supervision.
  • Train and Develop Staff: Train and mentor kitchen and prep-kitchen staff to ensure they have the skills and knowledge needed to excel in their roles.
  • Maintain Food Standards: Enforce and maintain the highest food quality standards, ensuring that all dishes meet our expectations.
  • Coordinate Kitchen Staff: Coordinate and assist kitchen staff as needed, ensuring seamless execution of dinner service.
  • Menu Planning and Presentation: Plan and design menus, including plating presentation for each dish, to ensure a visually appealing and delicious dining experience.
  • Staff Management: Hire, train, and manage staff to prepare and cook all menu items, ensuring a high level of quality and consistency.
  • Inventory Management: Conduct regular stocktakes and place orders as needed to maintain optimal inventory levels.
  • Safety and Sanitation: Enforce best practices for safety and sanitation in the kitchen, ensuring a clean and healthy environment for our customers and staff.

Requirements:

  • Culinary Education: Qualification from a culinary school is a plus.
  • Experience: 5+ years of experience in a similar position, preferably in a fast-casual or fine dining environment.
  • Culinary Knowledge: In-depth knowledge of food principles and best practices, including menu planning, inventory management, and kitchen operations.
  • Leadership Skills: Excellent communication and leadership skills, with the ability to motivate and inspire a team.
  • Bilingualism: Bilingual (Spanish) is a plus.
