Executive Sous Chef

We are seeking a highly skilled and experienced Sous Chef to join our team at Delicato Family Wines. As a key member of our culinary team, you will be responsible for overseeing the production of food for our winery and ensuring that high standards of quality and cleanliness are maintained.
Key Responsibilities- Assign daily tasks and monitor the output of the team to meet production requirements
- Lead by example, demonstrating a strong work ethic and fostering a positive and respectful work environment
- Guide team members in the proper use of assets and resources to avoid waste and ensure cost-effective operations
- Provide immediate feedback and directly assist team members to maintain productivity and deliver daily results
- Ensure employees have a safe, healthy, and rewarding work environment, providing applicable safety training and resolving/reports safety issues to management
- Support change initiatives and company decisions in an effective manner
- Communicate closely with supervisor regarding employee issues, concerns, and complaints in an objective and confidential manner
- Maintain company and regulatory compliance during day-to-day operations and advise supervisor of any infractions
- Assign and monitor employee breaks and lunches and provide backup relief
- Adhere to departmental GPS (Performance Management) guidelines and ensure proper GPS documentation
- High school degree, GED equivalent, or equivalent experience
- Degree from a Culinary institute or a minimum of 5 years working in a fast-paced kitchen environment
- 3+ years of leadership experience
- Food Handler Manager Certificate
- Basic English speaking and reading skills desired
- Knowledge of safe food handling, preparation procedures, safe handling, and precautionary procedures of chemicals, detergents, and sanitizers
- Understanding of use, operations, and care for all kitchen equipment
- Mastery of knife skills and cooking terms
- Working knowledge of hot and cold food preparations, seasoning, vinaigrettes, soups, sauces, stocks, vegetable preparations, basic butchery, and meat and fish cookery
- Knowledge and excellent execution of sanitation rules
The Sous Chef will work in a fast-paced kitchen environment with exposure to the elements/temperature variations. The position requires the ability to wear PPE (Personal Protective Equipment) and work in close quarters or confined spaces. The Sous Chef will be exposed to varying levels of dust, chemicals, fumes, gases, and noisy equipment.
