Job Title: Jr. Sous Chef

At The Little Nell, we are seeking a highly skilled and experienced Jr. Sous Chef to join our culinary team. As a key member of our kitchen staff, you will be responsible for assisting in maintaining smooth operations during assigned shifts, ensuring food is prepared to the highest standards, and training line staff to meet hotel and kitchen standards.

Key Responsibilities:
  • Set up and maintain a clean and organized kitchen station, adhering to Executive Chef specifications and recipes.
  • Cook and prepare food to order, ensuring quality and presentation meet hotel standards.
  • Properly store mise en place and submit production needs for the following day by shift end.
  • Work all stations as required, developing and training line staff to standard performance levels.
  • Assure safe and clean work conditions for all personnel, communicating with the Sous Chef on duty to ensure proper service.
  • Report to work on time, neatly groomed and in accordance with employee handbook guidelines.
  • Be a role model for others, promoting a positive and professional work environment.
  • Follow all policies and procedures for the Food and Beverage Department, The Little Nell, and Aspen Ski Company.
  • Supervise and coordinate the line crew to achieve assigned tasks according to Ajax Kitchen standards.
  • Maintain cleanliness guidelines for all kitchen production, walk-ins, and storage areas with the Sous Chef.
  • Attend department meetings as required and communicate any mechanical problems with the Engineering Department or Sous Chef.
  • Discuss and report guest comments or complaints to the Chef on duty.
  • Assist in daily inventories as needed and be familiar with hotel fire, safety, and health procedures.
  • Complete special tasks and projects assigned by the chef and assist others in the Food and Beverage Division as business volumes and staff levels demand.
  • Maintain a 100% satisfaction rate and take full responsibility for food quality.
  • Attend assigned management training classes and use labor and food budgets effectively.
Requirements:
  • High School Diploma or equivalent.
  • Five years of culinary experience.
  • Culinary degree or equivalent.
Work Environment and Physical Demands:

The Jr. Sous Chef will work in a fast-paced kitchen environment, requiring the ability to reach, crouch, kneel, smell, taste, stand, walk, or be on their feet for extended periods. They must be able to frequently lift, push, or pull up to 50 lbs. individually or with assistance.
