Overview:
As a Culinary Operations Manager, you will oversee kitchen staff in the procurement, production, preparation, and presentation of all food services, ensuring compliance with health and safety regulations while delivering high-quality culinary experiences.

Key Responsibilities:

  • Supervise daily food production and presentation for the hotel's dining establishments and room service, ensuring adherence to quality standards.
  • Manage human resources within the kitchen, focusing on recruitment, training, scheduling, and performance evaluations to foster a safe and productive work environment.
  • Oversee the maintenance and sanitation of kitchen facilities and equipment, ensuring compliance with health and safety regulations.
  • Monitor and control labor and food costs, preparing reports to ensure budgetary goals are met.
  • Promote safety initiatives to minimize risks and enhance workplace safety.
  • Collaborate with the Executive Chef in developing seasonal and special menus.
  • Assume Executive Chef responsibilities in their absence.
  • Maintain regular attendance and be available for scheduled shifts.
  • Perform additional duties as assigned.

Qualifications:

  • Two or more years of post-secondary education, with culinary training preferred.
  • A minimum of five years of experience in a similar role.
  • Advanced knowledge of food service principles and practices, including management of personnel and complex food service operations.
  • Familiarity with hotel operations, including marketing, safety protocols, and labor relations.
  • Strong leadership skills to motivate and develop team members.
  • Ability to work effectively under pressure and meet deadlines.
  • Excellent verbal and written communication skills, with the ability to adapt communication styles for various audiences.
