POSITION SUMMARY

The Culinary Operations Manager will oversee all facets of the American Bounty Restaurant's bar area, referred to as The Tavern. This role is crucial in maintaining high-quality standards and ensuring operational excellence within The Tavern. Responsibilities include managing labor and food costs, guaranteeing food quality, and enhancing customer satisfaction.

ESSENTIAL RESPONSIBILITIES

  1. Management and oversight of all operational components of The Tavern, including menu design and execution in collaboration with the Food & Beverage Office.
  2. Conducting interviews, hiring, training, and scheduling of staff.
  3. Placing orders through the Eatec system for all Tavern requirements and ensuring the kitchen and dining area are adequately stocked throughout service hours.
  4. Establishing and implementing systems and Standard Operating Procedures (SOPs) to enhance service and production efficiency.
  5. Developing strategies to boost kitchen productivity and optimize space utilization.
  6. Ensuring product freshness and quality by conducting daily tastings.
  7. Updating manuals, including recipes, methods, and photographs, while staying informed on industry trends, new ingredients, and techniques.
  8. Assisting in the receipt and organization of food products and supplies.
  9. Maintaining par stock levels to prevent shortages and ensuring sufficient food products are available at line stations for smooth service.
  10. Taking ownership of the quality of all served products.
  11. Managing the handling, portioning, and rotation of food items in compliance with health regulations, while practicing clean and sanitary work habits.
  12. Following proper plating and garnish presentation for all dishes.
  13. Delivering high-quality customer service promptly and maintaining positive relationships with Chef Instructors, students, and Front of House Instructors.
  14. Properly opening and closing the kitchen, adhering to checklists, and assisting colleagues as necessary.
  15. Completing special projects as assigned.
  16. Performing any additional duties as required.

REQUIRED QUALIFICATIONS

Education: High School Diploma

Experience: 2-3 years of culinary experience in a full-service kitchen.

Licenses/Qualifications: Food Safety/Sanitation Certificate

PREFERRED QUALIFICATIONS

Education: Associate's Degree in Culinary Arts from a recognized institution or equivalent.

Experience: 4-5 years of experience in a full-service kitchen.

REQUIRED SKILLS

  • Excellent communication abilities.
  • Strong customer service orientation.
  • Ability to thrive in a fast-paced environment while managing multiple tasks and demands.
  • Proficient in menu creation and recipe writing.
  • Capable of following printed recipes and executing plate presentations.
  • Adherence to personal hygiene standards as per Health Department regulations.
  • Advanced knife skills and intermediate to advanced culinary expertise.
  • Ability to read, write, and communicate effectively in English.
  • Demonstrated responsiveness to customer needs.
  • High energy and self-motivation.

WORKING CONDITIONS

Flexibility in scheduling is required, including availability for days, nights, and weekends. The role necessitates prolonged standing, lifting, bending, and stretching. Candidates must be able to stand for extended periods and lift up to fifty (50) pounds. The ability to work in high-temperature environments near cooking equipment is essential.
