Culinary Operations Manager

Established in 1990, Great Western Dining Service, Inc. specializes in providing exceptional dining solutions for educational institutions, camps, conference venues, and corporate settings. Our commitment to quality service and delectable cuisine has been unwavering since our inception.
We are currently seeking a Culinary Operations Manager to oversee our food service operations. The schedule is Monday through Friday, from 6 AM to 3 PM, with one evening meal service each week.
The Culinary Operations Manager will be tasked with the comprehensive planning, organization, and management of food service operations, ensuring adherence to current standards, guidelines, and regulations. The goal is to deliver high-quality nutritional services daily while maintaining a clean, safe, and sanitary environment.
Key Responsibilities:
- Recruit, assess, coordinate, motivate, and supervise food service staff.
- Conduct training sessions for all food service personnel as per a predetermined schedule.
- Plan, prepare, and present all meals served within the facility.
- Maintain accurate budgeting, inventory, and portion control, adhering to budgetary guidelines.
- Ensure a sanitary work environment, complying with local regulations regarding food storage, handling, and service.
- Perform administrative tasks such as completing necessary documentation, reports, and evaluations to manage equipment and supplies effectively.
- Keep the dining area clean and organized.
- Obtain and maintain Serv Safe/Food Handler's Permit.
- Design menus in accordance with legal requirements and practical experience, ensuring adherence at all times.
- Process dietary changes and collaborate on therapeutic and regular diet plans to comply with physician orders.
- Order food within budget constraints and maintain accurate food inventory records.
- Develop and implement culinary procedures to ensure timely meal readiness and appropriate temperature standards.
- Engage with residents regularly to gather feedback on food preferences to tailor the dining experience.
- Arrange for coverage of responsibilities during staff absences through delegation or personal involvement.
- Assist in meal preparation as needed.
- Promote a positive and professional image through conduct and appearance.
- Perform additional duties as assigned that align with the position.
Qualifications:
- High school diploma or equivalent.
- Preferred: College coursework or education in food service and/or management.
- Preferred: Completion of an accredited course in large-scale food purchasing, production, service, and nutrition.
- Prior experience as a Culinary Operations Manager in a high-quality hotel, resort, restaurant, or healthcare setting.
- Ability to follow standardized recipes and menus for both regular and therapeutic diets.
- Capacity to make independent decisions without supervision.
- Strong communication skills.
- Ability to interact tactfully with residents, family members, staff, and the public.
- Ability to effectively communicate instructions to employees at all levels, both verbally and in writing.
- Proficiency in basic software applications necessary for job functions.
