Job Summary

Crooked Hammock Brewery is seeking a highly skilled and experienced Executive Chef to lead our kitchen team and drive culinary excellence. As the head of our culinary operations, you will be responsible for overseeing the preparation and presentation of our menu items, managing kitchen staff, and maintaining the highest standards of food safety and quality.

Key Responsibilities
  • Leadership and Team Development
    • Build and manage a high-performing kitchen team by making employment and termination decisions, coaching, and developing staff.
    • Uphold the company's core values and code of ethics in all aspects of team development and management.
    • Administer disciplinary actions and ensure compliance with company policies and procedures.
    • Collaborate with the General Manager and other departments to achieve operational goals.
    • Create a positive and inclusive work environment that fosters staff morale and engagement.
    • Oversee the training of kitchen staff in safe food handling practices, kitchen equipment operation, and sanitation procedures.
    • Delegate tasks and provide direction to employees to ensure efficient operations and high-quality food preparation.
    • Schedule labor to meet business needs and labor cost objectives.
    • Provide opportunities for professional development and education.
    • Represent the company in a professional and positive manner in the community.
  • Operations
    • Ensure that all food and products are prepared and served according to company recipes, portioning, cooking, and serving standards.
    • Prepare and maintain accurate records, including forms, reports, and schedules.
    • Fill in as needed to ensure guest service standards and efficient operations.
    • Oversee daily prep and ensure that prep lists are completed accurately and communicated clearly.
    • Perform daily line checks and detailed station checkouts to ensure cleaning and restocking.
    • Manage daily and weekly deep cleaning and facility maintenance duties.
    • Assist with daily, weekly, and monthly inventory as needed.
    • Regularly inspect equipment to ensure it is clean and in excellent working condition.
    • Order products according to specifications and receive orders to ensure correct unit count and condition.
    • Control food cost and usage by following proper requisition procedures and standard recipes.
    • Check and maintain proper food holding and refrigeration temperature control points.
    • Enforce food safety and sanitation standards.
  • Qualifications
    • 5+ years of experience in varied kitchen positions, including food preparation, line cook, grill cook, and expeditor.
    • At least 1 year of experience as a Chef/Kitchen Manager or 3 years as an Assistant Kitchen Manager in a high-volume kitchen.
    • College degree preferred, but a combination of practical experience and education may be considered as an alternative.
    • Valid driver's license and reliable transportation required.
    • Must be eligible to work in the United States and agree to a background check.
    • Must be ServSafe certified.
    • Flexibility to work nights and weekends, with the ability to balance personal and professional life.
    • Professional appearance, punctuality, and reliability required.
    • Hospitality soul with a guest-friendly demeanor.
    • Ability to work in a fast-paced environment and communicate clearly with managers, kitchen and dining room personnel, and guests.
    • Well-organized and proficient in basic computer applications, word processing, spreadsheet, internet, and POS systems.
    • Frequent walking and occasional bending, twisting, kneeling, climbing, stooping, and crouching required, with the ability to lift up to 55 pounds and maneuver 170 pounds.
