Job Overview:


The Assistant Manager of Food and Beverage plays a crucial role in ensuring that all dining and beverage services are delivered with exceptional quality and efficiency across various outlets, including Room Service, Lounge, and Banquets. This position also involves maintaining compliance with budgetary guidelines for payroll and operational costs.

In collaboration with Food and Beverage leadership, the individual will focus on strategies to enhance sales performance in Restaurant, Room Service, Lounge, and Banquet operations, aiming to surpass financial targets.

Qualifications:


Minimum of 5 years of progressive experience in hospitality or a related sector; alternatively, a 2-year college degree combined with 3 years of relevant experience; or a 4-year college degree with at least 1 year of related experience.

Proficiency in Windows operating systems, company-approved spreadsheets, and word processing is required.

Supervisory experience is preferred.

Strong communication skills are essential for conveying information and ideas effectively.

Ability to assess and choose among various courses of action swiftly and accurately is necessary.

Must perform well in high-pressure environments while maintaining composure and objectivity.

Effective problem-solving skills are crucial, including the ability to anticipate, prevent, identify, and resolve issues as they arise.

Ability to assimilate complex information from various sources and adapt it to meet specific needs is required.

Strong listening skills are necessary to understand and address concerns raised by colleagues and guests.

Basic financial literacy and arithmetic skills are essential.

Core Duties:
Engage with guests and team members in a friendly, attentive, and service-oriented manner.


Adhere to attendance standards as per the scheduling requirements of the organization.


Uphold high standards of personal appearance and grooming, including wearing the designated uniform and name tag while on duty.

Ensure compliance with company standards and regulations to promote safe and efficient operations.

Meet certification requirements relevant to the position, including Food Handlers, Alcohol Awareness, CPR, and First Aid.

Maintain a warm and welcoming demeanor at all times.

Familiarize oneself with the hotel's organizational structure and the functions of each department.

Facilitate the training of all Food and Beverage/Banquet staff according to established training protocols.


Follow up on all guest requests, issues, complaints, or incidents occurring in the Restaurant, Room Service, Lounge, or Banquets.

Assist in motivating, coaching, counseling, and disciplining Food and Beverage personnel in accordance with company policies.

Review staff hours for payroll processing and submit to Accounting in a timely manner.


Participate in weekly staff meetings and provide training on a rotational basis using effective training methods.

Engage in all Food and Beverage interviews and adhere to hiring procedures as per company guidelines.

Prepare employee shift schedules based on business forecasts, payroll budgets, and productivity needs. Present the schedule along with the Wage Progress Report to management weekly.

Ensure accurate and timely completion of wage progress and productivity reports.

Assist in conducting 90-day and annual performance evaluations according to company standards.

Implement all company policies and house rules effectively.

Contribute to the development and execution of Food and Beverage promotional initiatives.

Help maintain beverage costs within budgetary limits.

Ensure compliance with training protocols as outlined by the company.

Adhere to company procedures regarding purchase orders, invoice processing, and financial tracking.

Develop and promote sales initiatives, including upselling programs for service staff.

Ensure that service standards are consistently upheld throughout the Food and Beverage/Banquet Department.

Participate in required Manager on Duty coverage as scheduled.

Initiate necessary Food and Beverage-related reports in accordance with company standards.

Assist in the timely completion of Food and Beverage forecasting and budgeting tasks.


Ensure that all Food and Beverage employees maintain a courteous and helpful demeanor towards guests and colleagues.

Conduct quarterly inventory assessments and plan purchases accordingly.

Adhere to company policies regarding credit management.

Respond to negative market trends by implementing promotional strategies.


Organize and lead monthly department meetings with restaurant and lounge staff, as well as weekly Food and Beverage meetings.

Attend daily meetings to discuss business operations.

Manage beverage purchasing as required.

Procure Food and Beverage operational equipment as necessary.

Conduct monthly beverage inventory checks and reconciliations.

Ensure that food quality and presentation meet company standards.

Foster professional relationships and maintain open communication with managers, employees, and other departments.

Oversee Banquet department operations.

Utilize the hotel's Point of Sale system to generate reports and analyze data.

Establish and maintain a key control system.

Complete monthly menu analysis and submit findings to the corporate office.

Monitor and address any cash discrepancies in Food and Beverage operations.

Assist management and engineering teams in implementing emergency procedures.

Maintain an organized filing system for documentation related to purchases, schedules, forecasts, and reports.

Complete all necessary correspondence promptly and efficiently.

Attend monthly all-employee meetings and any other functions as required by management.

Maintain strong communication with all employees, providing motivation and seeking input on Food and Beverage matters. Ensure positive communication between Food & Beverage and Food Production teams.

Make necessary adjustments to the Point of Sale system for menu changes or server assignments.

Handle lost and found items according to established procedures.

Maintain required stock levels for all supplies.

Review daily food sales for accuracy.

Perform any additional duties as assigned by management.
