Job Overview:

Directs and organizes the activities of the Food and Beverage Department to maintain high standards of food and beverage quality, service, and merchandising to maximize profits.

Key Responsibilities:
  • Departmental Leadership: Plan and direct the functions of administration and planning of the Food and Beverage Department to meet the daily needs of the operation.
  • Team Management: Clearly describe, assign, and delegate responsibility and authority for the operation of the various food and beverage sub-departments.
  • Menu Development: Participate with the chef and restaurant managers in the creation of attractive and merchandising menus designed to attract a predetermined customer market.
  • Cost Control: Implement effective control of food, beverage, and labor costs among all sub-departments.
  • Performance Evaluation: Regularly review and evaluate the degree of customer acceptance of the individual restaurants and banquet service.
  • Operational Excellence: Develop operating tools necessary and incidental to modern management principles.
  • Team Coverage: Participate in Manager on Duty coverage program.
  • Technical Skills: Operate MS programs in computer.
  • General Maintenance: Perform general cleaning tasks using standard hotel cleaning products.
Other Expectations:
  • Attendance and Punctuality: Regular attendance is essential to the successful performance of this position.
  • Associates with Irregular Attendance: Associates with irregular attendance will be subject to disciplinary action.
  • Flexibility: Due to the cyclical nature of the hospitality industry, associates may be required to work varying schedules.
  • Professional Appearance: Associates must maintain a neat, clean, and well-groomed appearance.
Qualifications:
  • Culinary and Sales Background: Culinary, sales, and service background required.
  • Education: College degree in related field preferred.
  • Licenses and Certifications: Ability to obtain any government required licenses or certificates.
  • Experience: Extensive experience in restaurant, bar, banquet, stewarding, kitchen, sales, catering, and management required.
  • Supervisory Experience: Minimum two years supervisory experience in hotel industry.
  • Language Skills: Additional language ability preferred.
