Job Overview

Position Title: Culinary Specialist

Reports To: Food & Beverage Supervisor

Below are the Core Responsibilities that outline the primary functions and essential duties of this role. These responsibilities are categorized into two sections: Job Function and Professionalism and Style Expectations.

The Core Responsibilities contribute significantly to the overall performance evaluation, with Job Functions accounting for 90% and Professionalism and Style contributing the remaining 10%.

Job Function

The job functions describe the essential duties and responsibilities:

Administration

  • Ensure compliance with health and sanitation standards.
  • Maintain cleanliness and organization at each station.
  • Label and date all food items appropriately.
  • Open and close the kitchen in the absence of supervisors.
  • Follow all established recipes for menu items.
  • Notify supervisors of any out-of-stock items.
  • Prepare sauces and dishes for breakfast and dinner services.
  • Assist in setting up the restaurant and employee cafeteria buffet.
  • Prepare menu items and specials under the guidance of the Executive Chef.
  • Supervise and support dishwashers and pantry staff.
  • Execute tasks outlined in the Prep List schedule.
  • Maintain health and sanitation standards consistently.
  • Prepare dressings and cold sauces.
  • Ensure a sufficient supply of desserts.
  • Prepare salads for various dining options.
  • Assist with banquet preparations as needed.
Support

Possess a strong command of the English language to effectively communicate with guests, colleagues, and vendors.

Demonstrate a commitment to following all company policies and procedures.

Participate in mandatory meetings.

  • Other duties may be assigned as necessary.

Additional responsibilities specific to this role include:

  • Comprehensive knowledge of all hotel departments and functions.
  • Familiarity with applicable federal, state, and local health and safety regulations.
  • High school education and relevant training or experience preferred.
  • CPR and first aid training preferred.
  • Additional language skills are a plus.
