Job Summary

The CIA is seeking a highly skilled Sous Chef to join our team. As a key member of the Food & Beverage Operations team, you will be responsible for assisting in the daily operation of our on-campus restaurants. This is an exciting opportunity to work in a fast-paced environment and contribute to the success of our culinary programs.

Key Responsibilities

• Facilitate open communication with the Food & Beverage Operations team and Restaurant Faculty to ensure a high level of guest satisfaction and operational success.
• Manage the opening and closing of the restaurant, including supervising staff and ensuring that all side duties are completed.
• Train and supervise students participating in the Earn & Learn Program, including scheduling, time and attendance, and Student Financial Services.
• Assist with cross-training students on positions and stations, and create and maintain written manuals for all Back of House positions.
• Monitor food, beverage, and non-food costs, including taking and controlling inventories, maintaining pars, and adhering to budget.
• Order and maintain necessary food, beverage, and non-food items for all restaurant service, including a la carte, banquet, special events, and tastings.

Requirements

• Associate's Degree from the CIA or equivalent experience.
• One year of experience in a fine dining establishment.
• Strong analytical, problem-solving, and conceptual skills.
• Ability to work in a fast-paced environment and manage multiple competing tasks and demands.
• Strong knowledge of food and beverage items and cooking techniques, with the ability to pass on skills to students.
• Knowledge of MICROS Simphony, OpenTable, Eatec, or similar operating systems.
