The Pastry Chef de Partie plays a crucial role in managing the Pastry Station's operations. This position involves collaborating with fellow chefs to ensure the seamless execution of all pastry-related tasks. Daily meetings with the Sous Chef and/or Executive Sous Chef are essential to discuss the menu and time requirements for service.

Key Responsibilities:

  • Collaborate with team members to plan and execute pastry preparations.
  • Regularly check the expiry dates and proper storage of food items.
  • Ensure that all colleagues adhere to grooming standards.
  • Complete daily assigned tasks efficiently.
  • Collect feedback daily and report any issues that arise.
  • Maintain a daily protein count sheet.
  • Prepare a sheet to ensure all stations are adequately stocked.
  • Set up stations properly for service.
  • Possess thorough knowledge of food preparation, receiving, storage, and sanitation procedures.
  • Be fully aware of all menu items, including their recipes and presentation standards.
  • Operate and maintain all kitchen equipment, reporting any malfunctions.
  • Facilitate effective communication among staff to maintain a secure and friendly work environment.
  • Demonstrate the ability to meet deadlines while assisting and motivating others.
  • Ensure proper closing procedures are followed by colleagues.
  • Complete the Department of Health (DOH) sheet at the end of each shift.
  • Organize the cooler each night, ensuring proper storage of produce.

Qualifications:

The ideal candidate should possess excellent communication and organizational skills, along with a passion for crafting flavorful and visually stunning pastries. A strong understanding of baking techniques and ingredients is essential for success in this role.
